Pesto - Tips for Preparing the Best and Healthiest Pesto (Guest Post)

Pesto is not only one of the tastiest condiments you can make, but it is also versatile and healthy. Made with fresh and pure ingredients, it includes some of the best things nature has to offer. The ingredients are simple and basic; They include fresh basil leaves, fresh garlic, olive oil, fresh walnuts (not roasted) or pine nuts, salt and pepper.



You can buy pesto in the supermarket, condiment stores or alternatively make it in a food processor, it will probably taste good, but our goal is excellence.

To produce really great pesto, you need to chop it by hand; when you put it in a food processor it becomes too doughy and too juicy. This is often the problem with commercial products, but when chopped by hand, you get the perfect consistency. The other reason to make it at home is that you can make sure you are using the highest quality ingredients. When choosing your ingredients, it is best to go to a farmers market or somewhere that has a particularly good turnover. There are many different varieties of basil leaves, lemon basil, clove basil, and cinnamon basil, to name just a few, sweet basil is primarily used for pesto, but ask your local grower for other varieties and see which one you prefer. The basil leaves should be a deep green color (avoid dark spots and yellowing). They are available all year round, but there is usually a big difference in size and flavor between the summer months, when it grows freely and abundantly, and in winter.

Fragrant and sweet, basil also has many health benefits, it has anticancer and antiviral properties, it is an excellent source of vitamin A, and a good source of magnesium, which promotes cardiovascular health. To prepare the basil, wash the plant and dry the leaves, once the leaves no longer drip remove the stems. It is best to cut the stems where there are no longer many leaves and then separate the leaves from the main branch. It’s fine to leave some of the smaller stalks behind, but putting the larger main stalks in the pesto is not recommended. Chop the leaves finely, for this recipe; It should have about 2 full cups of chopped basil. The next step is to take a handful of walnuts and chop them small, but not until they have a powdery consistency. After chopping, you should take half a cup of walnuts. The pesto will be better if you can taste the small pieces of nuts, they should not be larger than a grain of rice. As you prepare your pesto, take note of the healthy qualities of its ingredients. Walnuts are rich in vitamin E and an excellent source of healthy monounsaturated fats that are good for the heart. Some people use pine nuts; we’ve found walnuts to add a thicker, richer texture.

Drizzle with just enough virgin olive oil so it sticks like a paste. Extra virgin olive oil is one of the most beneficial oils for health on the market and has been shown to be highly protective against heart and chronic degenerative diseases. About two tablespoons of fresh garlic and salt and pepper should be added to taste. People are always surprised when they see how much garlic we put in, it not only adds wonderful flavor, but also has abundant health benefits. To name just a few, garlic has antibacterial, antiviral, and anticancer properties and the ability to lower blood pressure. We found that a large amount of fresh garlic not only increases flavor, but also helps us introduce healthy foods into our bodies. Some people like to add Parmesan cheese to their pesto, we think this adds unnecessary fat content and therefore reduces the overall nutritional benefits. Pesto is delicious as a spread on bread or crackers, added to salads, or eaten with grains, pizza, or with any vegetable stew or dish. Pesto is truly versatile, capable of enhancing almost any meal.

On September 20, 1519, Portuguese navigator, Ferdinand Magellan (c. 1489-1521), set sail from Spain on a mission to find a western route to the Spice Islands. He reached the coast of South America and then navigated the strait linking the Atlantic and the Pacific which now bears his name, the Strait of Magellan. He crossed the Pacific to the Philippines in1521, where he was killed in a battle with the natives. Juan Sebastian del Cano (c. 1460-1526), a Spanish navigator, stepped into the shoes of Commander after Magellan’s death and returned to Spain in 1522. Three of the five ships Magellan led on the expedition did return to Europe. But what became of the Spice Islands?

World Cuisine: Four (4) Nigerian Dishes You Must Try (Guest Post)

Nigeria is regarded as the largest black country in the world having over 150 million citizens and over 250 ethnic groups with 3 major ones. Each ethnic group has some peculiar cuisines associated with them. Below are some of these foods and how to prepare them.  This article explores some mouth-watering Nigerian cuisines you should try.



1. Ofada rice with stew: Ofada is a small town in the South-Western part of the country. Its residents are known to be rice farmers hence the rice grown is named after the town. This rice is brownish in colour and sold across the country.

Ingredients: 2 and a half cups ofada rice, 5 cups water, 1 tsp. vegetable oil (optional), 1 tsp. Salt.

Direction to cook includes heat up the 5 cups of water in a pot till it boils, rinse rice thoroughly with cold running water and pour into the pot of boiling water. Add salt and oil. Thereafter, cook for 35 minutes or until its ready (soft to eat).

2. Pounded yam and melon soup (egusi): This delicacy is also known among the south-western Yoruba people. The ingredients for 2 servings include 1 tuber of yam, 2 cups of ground melon, fresh tomatoes, fresh pepper, 1 medium-size ice fish, Palm oil, onion, stock cube, 1 tsp of salt, 1 small bunch ugwu leaf.

Direction to cook: Peel, wash and boil yam till its well-cooked. Pound in a mortar with a pestle, mould into balls and set aside. Add little water to ground egusi in a pot to form a thick paste with blended pepper, onion and tomatoes. Stir the mixture and allow to cook before adding palm oil. Pour in some water to lighten the soup if too thick, stock cubes, salt to taste and your fried ice fish. Finally, add chopped ugwu leaf and allow to cook for 5 minutes. Serve pounded yam and egusi soup.

3. Afang soup
is eaten by the Efikis/Ibibio people of Nigeria. This soup has a bit of bitter taste but highly nutritious and tasty.

Ingredients are Smoked fish, beef or assorted meat, ground crayfish, periwinkle (optional), Afang Leaves (dry or fresh), Water leaves (Alternatively, lamb lettuce or Spinach), Palm oil, Stock cubes, Fresh pepper or ground dried pepper (to taste) and Salt to taste.

Direction to cook: wash and cut Afang leaves, pound or blend it and set aside then slice the water leaves and also set aside. Cook until tender the assorted meat, smoked fish or beef and stockfish with chopped onions, one stock cube/seasoning cube and salt to taste. Then clean the dried fish in hot water, remove the bones to avoid choking while eating and add the fish to the pot of cooked meat. Add the Palm oil, pepper, ground crayfish and stock cube to the pot. Mix well and then add periwinkles (if you are using any). Add salt to taste. Cover the pot and leave to boil for about 12 minutes. After 12 minutes, add the Afang leaves, leave to simmer for 3 to 5 minutes and then add the water leaves. Afang soup is ready to be served hot with Starch, Pounded Yam, Wheat meal, Eba, Fufu, Semolina, Amala,

4. Tuwo shinkafa is popular throughout the northern parts of Nigeria. It is a unique dish consisting of rice flour or soft, short-grained rice and water.

Ingredients: 1 cup white rice (non-parboiled) and 3 cups water

Direction to cook: Wash the non-parboiled rice to a pot. Add water to the rice and let it cook till the water is dry and very soft. Next, using a wooden spoon, mash the rice against the edges of the pot to bring the rice together. Stir and mash continuously until it forms one nice lump. Tuwo Shinkafa is often served as an accompaniment to various soups and stews such as egusi, miyan Kuka, miyan taushe, and stew for overall nutrition.

1. Asafetida. This is an Asian spice made from the roots of certain species of Ferula. It is a gum-like spice with a very strong and unpleasant smell.  Actually, the name of the spice has a Latin origin, which means “evil-smelling gum”.  Asafetida is common in Indian vegetarian cuisine and is often the main ingredient in rice and bean dishes. Additionally, it has a wide range of medicinal properties and is beneficial for people with digestive disorders, high cholesterol, and/or nervous disorders.  Asafetida is rich in minerals and nutrients, such as iron, calcium, phosphorus, and protein.  Although most chefs and cooks rarely prepare a dish without onion and garlic, some people do not eat onion or garlic.  Certain people are allergic to onions and for some people, garlic causes extreme heart burn.  Asafetida is an ideal spice for those people.  In fact, its smell is similar to both onion and garlic.






2. Dried Avocado Leaves.  This spice (or herb) originated in Mexico. It is one of the most popular spices in Mexican cuisine.  Avocado leaves have an aniseed fragrance; however, these dried leaves are odorless and have a pungent taste. Dried avocado leaves are added to bean or meat dishes. Regarding health benefits, they are useful for people who have kidney stones and hypertension. Noteworthy:  Only certain varieties of avocado leaves are to be used in cooking or for medicinal purposes because some kinds of avocado leaves can contain toxic substances.

3. Epazote. This is another essential spice used in Mexican cuisine. Its extraordinary (or strange) scent can be described as a combination of kerosene, mint, and citrus. Epazote is made from the leaves of Mexican herb called dysphania ambrosioides (aka "Mexican tea").  It is used with bean and meat dishes. Additionally, it can be used in soups.

4. Grains of Paradise. This delicious spice is an integral part of West African cuisine. It is obtained from a flower called Aframomum melegueta. Africans believed that this flower grew in Eden. Grains of paradise look like seeds and have jasmine, citrus, and hazelnut odor. It can be added to meat, fish, and potato dishes.

Recipe Sharing: Chili Cornbread Salad (Guest Post)

In Texas, chili is a big deal! In the South (Southern states of the USA) folks love cornbread. I am from the South and currently live in Texas and I found a recipe that is a winner! I have no doubt that this dish will show up a church fellowships and other happy gatherings.

INGREDIENTS:
1 package (8-1/2 ounces) cornbread/muffin mix
1 can (4 ounces) chopped green chilies, undrained
1/8 teaspoon ground cumin
1/8 teaspoon dried oregano
Pinch rubbed sage
1 cup mayonnaise
1 cup (8 ounces) sour cream
1 envelope ranch salad dressing mix
2 cans (15 ounces each) pinto beans, rinsed and drained
2 cans (15-1/4 ounces each) whole kernel corn, drained
3 medium tomatoes, chopped
1 cup chopped green pepper
1 cup chopped green onions
10 bacon strips, cooked and crumbled
2 cups shredded cheddar cheese

METHOD:
Prepare cornbread batter according to package directions. Stir in chilies, cumin, oregano and sage. Spread in a greased 8-in. square baking pan. Bake at 400° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool.

In a small bowl, combine mayonnaise, sour cream and dressing mix; set aside. Crumble half of the cornbread into a 13x9-in. dish. Layer with half of the beans, mayonnaise mixture, corn, tomatoes, green pepper, onions, bacon and cheese. Repeat layers (dish will be very full). Cover and refrigerate for 2 hours.

Desserts: "Yolka" with Mango and Passion Fruit Confiture (Guest Post)

Ingredients: ⠀

⠀ 📌Merengue:
Egg white 150 g
Granulated sugar 300 g
Lemon juice 1 tsp

⠀ 📌Cream mascarpone:
Mascarpone 150 g
Cream 33% fat 100 g
Powdered sugar 1 tbsp (optional)
Vanilla extract 1 tsp

⠀⠀ 📌Filling:
Mango jam - passion fruit 150 g

Preparation:

STEP 1. Meringue:
Heat the protein with sugar in a water bath, stirring constantly, until the sugar crystals dissolve. Remove the protein mass from heat, beat with a mixer until stable peaks. At the end of whipping, add lemon juice. On pastry parchment, draw 3 circles of the desired diameter, turn over and place on a baking sheet. Spread the protein mass with a silicone spatula (or spoon) within the circles drawn, making a small indentation in the center of the circle. Place the baking sheet in an oven preheated to 150 ° C and immediately reduce the temperature to 100 ° C. Bake for ~ 1.5 hours. The exact baking time and temperature range depend on the power of your oven. The meringue should not brown, but should have a hard crust. Cool the finished meringue cakes. ⠀

STEP 2. Cream mascarpone:
Using a mixer, beat the chilled cream with mascarpone and vanilla extract until stable peaks (add powdered sugar if desired). ⠀

STEP 3. Assembly:
Put the cream on the meringue cake, then add a layer of confiture. Repeat with the following cakes. Place the finished cake in the refrigerator for ~ 1 hour.

❗️ Notes: To prevent the pastry parchment from slipping on the baking sheet, grease the edges with whipped protein mass and glue it to the nasty. Bon Appetit!

The Ratio of Dry and Fresh Herbs (Guest Post)

Herbs are expensive to buy, but because they take so little space, they are also really easy to grow your own. If you purchase fresh herbs from the grocery store, you can extend the life of any fresh cut herb by wrapping the stems in a damp paper towel and place the entire bunch inside a bag for refrigeration. To deal with the excess before it goes bad, you can chop, add a little oil and freeze 1 tsp. or 1 tbsp. blobs on a sheet, and then bag for use later.

You can also dry herbs. Wash and remove leaves from the stem, simply place on a paper towel over a cooling rack, or use a dehydrator tray. Place where the air is warm and there is less light (sunlight will reduce the essential oils). Once dry, store in repurposed clean jars in a dark cupboard. If you are drying large amounts, keep the bulk of it in whole leaf form and only lightly grind the amount meant for storage in the kitchen cupboard.

Dry herbs? Fresh herbs? The answer is: either. The ratio of replacing dry herbs with fresh herbs goes like this:

  • 1 tsp. dry herb = 1 Tbsp. fresh herb

However - IF the dry herbs are older than 2 years, increase the ratio to:

  • 2 tsp. dry herb = 1 Tbsp. fresh herb

Some herbs such as bay leaf, parsley and cilantro, become quite mild after dehydrating, so cooks often double the amount:

  • 1 leaf = 2 leaves
  • 1 tsp. = 2 tsp.

If herbs have accidentally been ground into a powder, this fine flour is now more concentrated and this is the ratio:

  • 1 tsp. fine ground dry herb = 1 Tbsp. dry herb

Four Uncommon Cooking Ingredients Explained (Guest Post)

Below is a short explanation of  four (4) uncommon cooking ingredients and how to use them in cooking. 


1.  Clear Jel is a refined cornstarch that reacts better for freezing and canning recipes in particular; cornstarch tends to go cloudy in these situations. Clear Jel is used in the same proportion of cornstarch (1:1) in baking recipes. Like traditional cornstarch and the health store alternatives - arrowroot and potato powder, etc. - this product needs to be combined with the sugar (or flour) called for in the recipe prior to adding to any other ingredients in order to reduce clumps from forming.

2.  Sea salt is healthier than regular table salt; the fact that it requires less processing means it also has a smaller ecological impact. It is a natural source of iodine, which, along with other nutrients, is essential for a healthy sex life. A local herbal consultant once told us that sea salt can also be used in place of Epsom salts in your bathwater.

3.  Tamari is considered to be less salty than soy sauce and is often stocked in health food stores. You can find low-salt versions of both tamari and soy sauce. Tamari sauce, however, has enzymes that aid digestion and promote healthy intestinal bacteria.

4.  Orange Zest, citrus zest or citrus powder are all terms referring to a similar product - to simplify we personally call it 'citrus zest'. It is used to bring out other flavors and to condition flour. Chop lemon, orange or lime peel and allow to dry (or use a dehydrator) - turn this into a powder using a blender or grinder, and store in the cupboard as you would any spice or herb. 1 Tbsp of fresh zest is equal to 1 tsp. of dried; while 1 Tbsp of fresh zest is equal to 6 Tbsp. juice. As such, this one ingredient in the cupboard offers more ways of reducing grocery costs.  Making your own citrus zest at home is a fantastic way to move toward a more frugal kitchen, while reusing "waste" (the peels).

Recipe Sharing: Chinese Pork Pies (Guest Post)

The Chinese do such wonderful things with pork.  Like Chinese Pork Pies.  Here's the recipe.  


INGREDIENTS

400g pork sausages, casings removed

4 spring onions (shallots), thinly sliced

2 teaspoons Chang‘s Pure Sesame Oil

1 1/2 teaspoons ground star anise

125ml (1/2 cup) warm water

50g lard or butter

300g (2 cups) cake, biscuit & pastry plain flour (see note)

1 tablespoon warm water, extra (optional)

1 egg, lightly whisked

1 teaspoon sesame seeds

Tomato chutney, to serve

Watercress sprigs, to serve


METHOD

Step 1

Place the sausage meat, spring onion, sesame oil and star anise in a bowl. Use your hands to knead until well combined. Cover with plastic wrap. Place in the fridge for 1 hour to rest.


Step 2

Stir the water and lard or butter in a saucepan over medium-high heat for 2 minutes or until the lard or butter melts. Place the flour in a food processor. Season with salt. Add the water mixture and process until the mixture comes together, adding the extra water if necessary. Transfer to a clean surface and quickly knead until smooth.


Step 3

Preheat oven to 180oC. Divide the pastry into 2 portions, one slightly larger than the other. Roll out the larger portion until 2-3mm thick. Use an 11.5cm round pastry cutter to cut 6 discs from the pastry. Line six 80ml (1/3 cup) muffin pans with the discs. Divide the sausage mixture among the lined pans, pushing the mixture into the side of each pan. Roll out the remaining pastry until 2-3mm thick, re-rolling the excess pastry if necessary. Use a 9.5cm cutter to cut six discs from the pastry. Place the discs on top of the pork mixture and crimp the edges to seal.


Step 4

Bake the pies for 30 minutes or until they start to brown. Transfer to a baking tray. Brush the tops with egg and sprinkle with sesame seeds. Bake for a further 10 minutes or until golden. Set aside to cool. Serve with the chutney and watercress sprigs.

Tomato, Peach and Whipped Ricotta Salad

INGREDIENTS

2 tablespoons red wine vinegar

1 1/2 tablespoons extra virgin olive oil

400g tomato medley mix, halved

2 medium tomatoes, thinly sliced

3 yellow peaches, stones removed and discarded, cut into thin wedges

375g fresh ricotta

3/4 cup plain Greek-style yoghurt

1 small garlic clove, crushed

1/4 cup pistachio and thyme dukkah, plus extra to serve

1/2 cup fresh basil leaves


METHOD

Step 1

Whisk vinegar and oil in a large bowl until well combined. Season. Transfer 1 tablespoon of mixture to a small bowl and reserve. Add tomatoes and peaches to large bowl. Gently toss to combine.


Step 2

Process ricotta, yoghurt, garlic and dukkah in a food processor until well combined. Season.


Step 3

Spread ricotta mixture over base of a large serving platter. Drain tomato mixture, discarding liquid. Arrange over ricotta mixture. Top with basil and extra dukkah. Drizzle with reserved vinegar mixture. Serve.

Spices in Filipino Cuisine by Carlo Villamayor (Guest Post)

It's no secret that Filipino cuisine is one of the best in the world, but like any good food, it has to have its secrets. Few people have really mastered authentic Filipino food, not the washed-down fare you get in fast foods and diners, but real, home-made native dishes. Although most of us can whip up something when we need to, it can be hard to capture that distinct Filipino taste.

So what really goes into our food? How do you make your food taste truly Filipino? There's really no single answer because no one can define our food; we come from a hodgepodge of cultures, after all. But one thing that sets us apart from our Asian neighbors is our heavy use of spices. Whereas other cuisines prefer subtle hints of flavor, we like a big burst of it with every bite.

So that's the first rule: be generous with the spice. If you want your dish to fit in with other Filipino recipes, get to know the spices that go into them. Here are some of the most common. 





Ginger

Ginger is used in most of Asian cuisine, and Filipino food recipes. In the Philippines, it is most commonly used in soups and stews; dishes such as arroz caldo (rice porridge), and tinola (chicken stew) use garlic as their main spice. It goes particularly well with chicken and fish dishes, where it provides a nice contrast to the strong meat flavors. Ginger is used both for flavor and aroma, although the flesh of the root is not always eaten. Most people just crush the root and drop it into the dish, then take it out just before serving.

Chili

We're not as wild about spicy food as the Thais, but we do like a bit of bite in our food. Virtually every Filipino dish can be spiced up with chili peppers, from rich meat viands to everyday soups and noodles. Sauces like patis (fish sauce) and soy sauce are often mixed with crushed chili and used as dips or marinades. Bicol, a region in southeastern Luzon, is known for using chili peppers in most of its dishes. Perhaps the most popular is Bicol express, made with meat, bagoong (saut'ed shrimp paste), coconut milk, and chopped green chilies.

Garlic and onions

These two almost always go together, especially in meat and vegetable dishes. You may be more familiar with Taiwanese and Australian garlic, which have larger cloves and are easier to work with. But if you want a stronger, spicier flavor, go for native garlic. Philippine garlic comes in smaller bulbs, with cloves less than half the size of other types. This makes them hard to handle, but it's well worth the trouble.

Philippine onions are strong and pungent, making them a great source of flavor. Use native red onions for saut'ing and pickling, but use the white ones for salads and sandwiches. If you're making rice porridge, top it with chopped green onions for extra spice.

Lemongrass

Lemongrass has strong-smelling leaves and stalks commonly used in soups, teas and sauces. The leaf is slightly sweet with a hint of citrus, a perfect complement to gravy and other meat sauces. There are several ways to use lemongrass, but the most common method is cooking the fresh leaves (sometimes the entire stalk or bulb) with the food to release the flavor. If you're using the stalk, take only the soft inner part and chop it up before dropping it in. You can also use dried and powdered lemongrass, especially if you're in the city and fresh leaves are hard to find. 




Pandan

Pandan is mostly an aromatic ingredient, most commonly used with plain white rice. Just add a couple of leaves to your rice as it boils, and it comes out with a strong, inviting aroma. Some regions even weave it onto rice pots for an even stronger scent. You can do the same with rice cakes, puddings, and other Filipino desserts recipes.

Bay leaf

The strong, pungent taste of bay leaves makes them a perfect fit for Filipino cooking recipes. The leaf has a wide range of uses, from meat sauces and dips to main dishes like adobo, menudo and mechado. Dried bay leaves are traditionally used; fresh bay is seldom available in local markets. The leaf itself is not usually eaten; like ginger, you can take out the leaves once you're ready to serve. However, most people just leave them in and set them aside when eating.

Sri Lanka Ethnic Cuisine by Melisa Marzett (Guest Post)

Sri Lanka national cuisine is based on plant products:  rice, corn, peas, lentils, and other beans.  Also, all sorts of flour made out of pulse crops and vegetables are an integral part of the local cuisine.

Rice is the basis of many of the national dishes in Sri Lanka. It is spiced with curry, seasoning and other local ingredients here, with seafood and fruits, coconut flakes and vegetables.  The combinations, at first sight, are unbelievable!


Traditionally, the food is prepared in either handmade crockery-ware or metallic crockery over an open fire. There are a lot of seasoning and sauces in traditional Sri Lankan cuisine, which is why it is practically impossible to define its unique taste. Curry is the most popular seasoning. But there is also, a hot sauce antiaris made of fruits with seasonings, red hot sauce masala, miti kiri dry coconut milk, cut thin mix of onion and salt, dry fish, red pepper and lemon lunumiris, a ginger hand in syrup and other exotic seasonings are common.


The Ceylonese (Sri Lankans in Singapore) consume a huge number of fruits and greens. They make salads out of different fresh vegetables and fruits or just some greens using traditional tomatoes, pepper, onion, bamboo runoffs and a various exotic assortment, including some special tree leaves, banana palm flower, and algae. Meat is not consumed much due to the cows to being considered holy animals. Instead, they eat a lot of and a variety of seafood.


Sri Lanka courses:

  • Roti, which is a rice cake, a daily course in Sri Lanka
  • Appa, which is rice-flour and coconut milk pancakes. They look like typical pancakes but whiter and more transparent.
  • Indi appa, which is rice pasta made of rice flour of course.
  • Pitta, which is boiled steamed rice-coconut mix in bamboo handle.
  • Kiribath, which is pink rice, boiled in coconut milk.


Tea is the main drink in Sri Lanka. But fruit juice and coconut milk are preferred drinks as well. As for the local alcohol, it is better for a traveler not to become familiar with it. Alcoholic beverages are available but there is basically no purification procedure for making the local alcohol so most Europeans or westerners may not appreciate the taste. As for the local Lion beer, it is brewed in accordance with classic recipes. It is not expensive and some who drink it say it's very delicious.
