If you are learning to cook, do you know your caviar?

So tell me. What do you know about caviar? Well? In the old movies I like to watch people usually always have champagne and caviar. Caviar looks like little small beads and comes in different colors. And uumm … only rich people eat caviar because it's really expensive! But if you search online you can find quality but inexpensive caviar that you can give as gift. 

Uh huh.  You know as much about caviar as me.  Cool!  We can learn together.  ☺


Like most foods that we enjoy today, caviar has ancient origins. Of course, the Persians and the Greeks enjoyed sturgeon roe. The word "caviar" comes from the Persian word "khavyar", which means "egg-bearing". And of course, Caviar was once considered a royal delicacy, i.e. food only eaten by the royals and the elites, who had wealth and status. But these days, ANYBODY can order caviar online or shop for it at their local grocery store (it's available at my local grocery stores)


FUN FACTS FOR FOODIES:

Persians created what we now recognize as caviar. They were the first to cure sturgeon roe and also introduced the practice of salting the roe to preserve it.

The Caspian Sea region (Iran, Kazakhstan, Turkmenistan, and Azerbaijan) is known for producing some of the finest caviar (Beluga and Kaluga caviar and other type of caviar). Even today it is home to 90% of the world's caviar. Since this area borders Russia, no surprise it became popular in Russia, where it was a staple at royal feasts and banquets.

In the 19th Century, in the USA, sturgeon was abundant in American waters, especially in the rivers and lakes of the Midwest and East Coast. Would you believe that caviar was often served as a free appetizer in saloons and bars? Supposedly its salty flavor encouraged the customers to drink alcohol. A German immigrant named Henry Schacht get credit for making the United States a major exporter of caviar. He started a business in 1873 exporting caviar to Europe. Would you also believe a lot of that caviar shipped to Europe is then re-imported to the U.S. labeled as "Russian caviar"? (Unfreaking believable!)

At any rate, high demand resulted in an environmental impact: overfishing caused sturgeon numbers dwindled, the price of caviar skyrocketed, and it's back to being a luxury item again.

To help meet the demand AND preserve wild sturgeon populations, alternative sources of roe are being used: salmon, lumpfish, and whitefish. In addition, caviar is produced using sustainable aquaculture practices.

Even so, don't even dream about caviar going back to being an available free bar snack. It is a luxury delicacy, enjoyed by people around the world, and can be easily purchased if you know where to shop or buy.

Caviar has a rich history going from ancient delicacy to modern luxury food, with ongoing efforts to balance demand with conservation.

Food Blurb: For Newbie Cooks Who Want to Cook Chinese Food

Once upon a time when I was a newbie cook, I wanted so badly to cook Chinese food.  But no matter what I did my food just did not have that authentic Chinese flavor.  This was before TV cooking shows had become so pervasive. 


Hormel Foods Corporation is an American food business that has been around since 1891. Me personally? I have been enjoying Hormel food products for over 50 years; mainly, its canned chili. I stumbled upon a product at my local grocery store and it changed everything!

There are 4 distinct flavors:

  1. Classic Sauce
  2. Szechuan Spicy
  3. Bangkok Peanut Sauce
  4. General Tsao

They are all delicious! But my favorite is the Classic Sauce. If these products are not on the shelf of your local grocery store, you might be able to find them at an Asian market in your area. If not they are sold via Amazon and are reasonably priced.

There are plenty more House of Tsang® products.  These are the ones I'm familiar with.  I promise you! Use any of these sauces in your recipes and it will taste just like you went out to eat at an Asian restaurant.

Why Your New Year’s Resolution Should Be to Eat More Fiber

The start of a new year is a great time to check in with yourself and think about how you want to improve for the year ahead. But unfortunately, many New Year’s resolutions aren’t realistic and wind up lasting just two to three weeks. Here’s a resolution that’s easy to stick to and can also make a big difference in your overall health and wellness: eat more fiber

Fiber can play an important role in reaching your health and wellness goals. 

It’s probably best known for its ability to help keep your digestive system moving, but there are other benefits as well – like helping to promote a feeling of fullness.  Even with fiber’s well-known health benefits, nine out of 10 Americans aren’t getting enough in their daily diet, according to the National Health and Nutrition Examination Survey (NHANES) 2015-2016.  Lauren Harris-Pincus, MS, RDN thinks she knows why.

"Fiber can be confusing," Harris-Pincus explains. "I think many people have experienced tummy trouble when they ate too much fiber and it overwhelmed their digestive system. With a simple strategy of introducing fiber slowly, they can receive all the health benefits without any discomfort."  

The 2015-2020 Dietary Guidelines for Americans recommend that women get 25 grams and men get 38 grams of fiber every day, but most only average 15 grams. Instead of aiming for 25-38 grams on Day One, Harris-Pincus has some tips on how you can make this resolution stick:

* Only increase your fiber intake by three to five grams each day. That way, you give your body time to adjust.

* Mix in high-fiber foods with your regular diet. As you’re ramping up your fiber intake, start by adding fiber to foods you already eat. It could be as simple as adding a high-fiber cereal to a yogurt parfait or adding nuts and berries to your salad.

* Drink more water. Insoluble fiber doesn’t dissolve in water, so make sure you drink plenty of fluids to help carry the fiber through your body. By eating more fiber and drinking more water, you’re helping your digestive system do its job more efficiently.

* Find a great-tasting fiber you love. Instead of viewing fiber as a chore, or something you "have to" eat, find a high-fiber option that you can look forward to eating.

"I think everyone has this idea of fiber as bland and boring," Harris-Pincus says. "But what people don’t realize is that there are tons of great-tasting, high-fiber foods. The easiest place to start is with your morning cereal."  


Fiber One has introduced a fiber-rich cereal that, well, doesn’t taste like a fiber-rich cereal. EXAMPLE:  Fiber One Strawberries and Vanilla Clusters is made with real strawberries and sweet vanilla clusters, but still contains 35 percent of the Daily Value of fiber in every one-cup serving. No pills, nothing to stir, just real food that makes fiber something you can enjoy eating.  And for when you’re ready to increase your fiber intake even more, Fiber One Honey Clusters has 40 percent of the Daily Value of fiber, and Fiber One Original Bran has 55 percent.

Beyond cereal, Harris-Pincus recommends eating whole fruits and vegetables, leaving the skin on things like apples and potatoes. Beans and legumes are another excellent source of fiber, so don’t shy away from the black beans in your fajitas. For easy snacks, popcorn is another fiber-rich option with four grams of fiber in just three cups of popcorn.

"Fiber really is overlooked, which is a shame because it can be this great-tasting, powerhouse nutrient," Harris-Pincus explains. "New Year’s resolutions are usually all about cutting calories or increasing protein, when in reality fiber can do all these amazing things for your body. You just have to start eating more of it to realize the benefits."

Foodie Friday : Falooda, An Indian Dessert

Shining my foodie Friday spotlight on Falooda. 

It's an Indian dessert. Friends in a forum introduced me to this dessert. Ingredients (for the picture below): Mango, Jelly, Basil Seed, Vermicelli, Tapioca Pearls, Condensed Milk, Rose Syrup and Vanilla Ice Cream. There are, of course, recipe variations (see below). Most ingredients you can probably get from your local grocery stores like mango, jelly, condensed milk, and vanilla ice cream. But you may want to shop online for Tapioca Pearls, Basil Seed, and Rose Syrup.

5 Unique Caribbean Teas and Herbal Benefits by Damian Powell

The Caribbean is an idyllic paradise comprising of different countries and territories that are savored by vacation tourists, pleasure-seekers, and people looking for relaxation in exotic locations. Trinidad, Guyana, Haiti, Jamaica, West Indies - take your pick and be transported to whole new worlds where you wish your days of freedom are not numbered. Your experiences will be very pleasant and memorable. 


If you have visited any of these locations then there is something you won't want to forget.

When browsing the local shops, you probably noticed certain herbal tea drinks which catch your attention with names like turmeric tea, soursop tea, bissy tea, cerasee tea, and fever grass tea. They may be native to other places but they were brought here to the islands and they were given a distinctly Caribbean twist. They could be Asian, African, or Latin American in origin, but Caribbean folks everywhere made use of them extensively and many people in the islands are familiar with them since childhood. Other herbal teas that are worth mentioning are peppermint, soursop, cinnamon, lemon ginger for its digestive aiding properties, and sorrel benefits of the hibiscus flower known as roselle.

WASHOUT HERBAL DRINKS:
Most Caribbeans, locally and abroad, would remember rituals or must do's administered by their parents at the end of the holidays or summer vacation. They were to do a "washout" with a mixture of local herbal drinks bought from the store. They could include turmeric, soursop, bissy, cerasee, fever grass tea, and other herbals concocted by the elders. They are supposed to deworm or bring out the toxins from the kids' systems before they return to school.

Below you will find information regarding 5 Caribbean herbal teas that are not only good for you but are also delicious.  

1) TURMERIC TEA
Turmeric tea adds zest to your morning routine. Turmeric is sometimes mixed with other herbs and spices like ginger, lemon, honey, and cinnamon to add more flavor. There is also caffeine-free turmeric tea which helps balance and supports a healthy inflammation response. Turmeric is a popular spice made from the rhizome or root of the Curcuma longa plant. It is native to Southeast Asia and is a member of the Zingiberaceae or ginger family. It has been used as a herbal remedy for generations in Caribbean alternative medicine. A range of turmeric teas is available for purchase in health stores or online. The active ingredient in turmeric is curcumin. Curcumin gives turmeric its characteristic yellow color and is proven to have anti-inflammatory and immune-boosting properties. Curcumin has low bioavailability, which means the body has a hard time accessing and absorbing the compound. For this reason, the herbal benefits of turmeric tea, with its guaranteed high concentrations of curcumin, are in demand. Turmeric tea, brewed using grated turmeric root or pure powder, is considered one of the most effective ways to consume curcumin. Soursop herbal tea is also a good source of vitamin C which boosts immunity. Thus, it also promotes the destruction of free radicals to protect your skin from oxidative damage.

3) BISSY TEA 
Bissy tea originated from Africa but is a staple drink in many Caribbean homes. It is an antidote for poison and aids in digestion, relieves diarrhea and inflammation, treats fever, and is considered a tonic. Bissy tea shows antioxidant properties and bissy is also used to treat fever, relieve inflammation, and diarrhea. Bissy tea is sourced from grated cola nuts which can expel toxins from your system. Its high concentration of tannic acid is the reason why it has antioxidant properties. When you're busy and you want a hot beverage, why not drink "bissy" tea and take a break from your busyness? You can buy bissy tea online on Caribbean websites tropical supermarket if it is not available at your local grocery store.

4) CERASEE TEA 
Cerasee Herbal Tea is derived from bitter melon. Bitter herbs and food are very nutritious because they contain various plant-based chemicals that are beneficial to health. Cerasee tea is full of phytochemicals like triterpenoids, polyphenols, and flavonoids that slow the growth of cancers and reduce the risk of heart disease. It also lowers blood sugar levels in diabetic people. Cerasee is also healthy for the gut because it takes care of worms and parasites. Thus, it can make you lose weight. Caribbeans are full of healthy surprises, and cerasee tea is one of the "bitter" but healthy truths.

5) FEVER GRASS TEA

Fever grass tea, doesn't give you a fever, ask the locals. Instead, it heals fevers and many disorders associated with blood.

What's Your Favorite Jelly, Jam, Preserves or Fruit Spread?

Do you have a favorite fruit topping for your toast? In the house that I grew up, there were only two choices: Welch's grape jelly or Smucker's strawberry preserves. That's what my mom bought. Since she was in charge of grocery shopping, that's what we ate!

So for most of my young life, it never occurred to me to eat something different. Until … one day, my mom brought home grape jam instead of grape jelly. It was still the brand name Welch's but it was jam instead of jelly. I don't know why! Maybe there was no more jelly on the store shelf. It was a mystery. But whatever the reason … we all went “WOW! It was amazing!” We kids made an incredible discovery. Jam spreads much smoother than jelly! It tastes just as good with peanut butter. Why didn't mom always buy this?



Well! All of the siblings, my sister, my brothers and me, decided to unite and requested that mom buy jam henceforth and forevermore! She complied. My mom was easy! (Sometimes.)

Fast forward to my life as a young adult. Got a job working for the federal government and was sent on an official assignment to San Juan, Puerto Rico. Usually, I ate breakfast in the hotel before leaving for work. I ordered a typical American breakfast: bacon, eggs, and toast. At this particular hotel, they had a basket of assorted jellies and jams on the table. Included in the assortment was pineapple preserves.

My life was changed forever!

Those pineapple preserves made the toast tastes like I was having a tropical party in my mouth! It got so that I looked forward to having breakfast every morning!


So now, if anybody asks what's my favorite jelly, jam, preserves or fruit spread?

Pineapple Preserves. What else?!

Tropickles! OR Tropickles? Walmart's Idea for Satisfying Cravings

Not sure if this is an idea who time has come or what!  Yes, I know lots of pregnant ladies crave pickles and ice cream.  But can you ever remember anybody craving fruit punch flavored pickles?  Not sure how the foodie folks at Walmart came up with this idea.  Maybe there were a bunch of pregnant ladies working in that department.  ☺

I shop at Walmart a lot. But when it comes to strange and exotic foods, I try to talk my kids into trying them out first.  What?  I got the idea from an old cereal commercial I used to watch on TV where kids were curious to try a new cereal and the way they tested it was to coax their baby brother into eating it first.  If he liked it then it must be OK.  So?  If it's a new food product?  If my kids like it, then it must be OK!
