Food Blog Spotlight: Custom Cakes by Rainbow Nourishments (Raw Vegan Cake Maker)

Was watching a health infomercial and the gentleman was supplying a recipe for a cake.  He showed the cake and then said we wouldn't believe what the ingredients were.  Have to admit when I saw the recipe I thought that cake was the best disguise I've ever seen.  Indeed, until I had to change my eating habits, it never occurred to me that so many foods that I loved to eat could be prepared in a completely different way and still be enjoyed.  Who knew?  

Evidently, the vegans knew and were way ahead with this knowledge.  In one of my previous posts, I shared my love of cake ("Which Cultures Make the Best Cakes?").  Today while surfing the Internet, stumbled across these wonderful creations by a food blogger named Anthea, who published a blog is RainbowNourishments.com.  She makes custom cakes.  Sure!  There are a lot of custom cake makers out there.  But this lady specializes in raw vegan cakes that are indescribable!

This recipe captures pretty much everything that I love about cakes. I love taking a bite of a sponge cake and squashing the air out of it in my mouth (ok, that sounds weird and confronting, but it's the truth so I'll stick with it). I love the simplicity and smoothness of raw cakes.

Whoever invented nicecream (aka icecr eam made of blended bananas) is a genius.I thought: what if I could combine my current favourite food (nicecream) with my favourite concept (rainbows) into something that could enjoy at ANY time of the day. Several years ago I was active in an online community which had many members who hail from India.  Many of them celebrate a festival called Holi which usually occurs during the month of March (although I have seen some say April).  Although I am not Hindu, I do like the idea behind this holiday tradition as it is a celebration of love, happiness, and colors.  Who wouldn't want to celebrate that, regardless of our diverse religious beliefs? 

I read some of the members' posts and noted that one writer expressed great enthusiasm about the “sweets” they enjoyed during this holiday. So? So you guessed it! I went on a hunt for Holi recipes. No surprise that I was able to find plenty at popular food blogs that I already like and follow from time to time.

Taking baby steps toward modifying my diet to incorporate vegan food into my meals is a much more reasonable and sensible approach. That's why it gives me great pleasure to shine the spotlight on:

Foodie Friday : Banana Brownies - Back for Seconds

Scanning pins on Pinterest and came across one pin shared by food blogger, Stephanie Brubaker, that made me start looking for recipe variations. Being that it's also #foodiefriday, it's also a perfect excuse to do a little detective work.  Brownies are on my list of fave foods, right along with cheesecake. Food Blog Spotlight: Tofu is the New Black on Tumblr

So glad such a thing as a spotlight was invented. The concept or idea of shining a light on something or someone worthy of being noticed comes in handy when you find a fantabulous food blog like “Tofu is the New Black”. 

My foodie adventures around the web often either begin here at this blog or at my complementary Tumblr micro-blog. Was scanning the posts stream and came across this amazing blog. Fortunately the publisher, “Irene”, introduces herself in both Italian and English. (No problem if she didn't. I keep my Google translator at the ready! ☺ ) 



Irene is a vegan and not only does she share great vegan recipes but the food images at her blog show off some of the prettiest food I've ever seen!  She scours the web and recycles recipes, cooking tips, healthcare tips, charts displaying food alternatives or substitutes, infographics, and other food finds.  She is PRO-Green and extremely environmentally conscious (as we all should be).  Her posts date back to August 2015. Got so excited just browsing January 2017, decided her food / foodie adventures needed to be shared with others.

Mark Your Calendars for November 1st to Celebrate World Vegan Day!

Happy World Vegan Day to all of those who are vegans. World Vegan Day has been celebrated every year on November 1st since 1994. 

To my vegan friends, I know that you are dedicated and committed to encouraging everyone to convert to a plant-based diet. Although I must confess that I have not fully crossed over, some significant changes have been made in my diet that you would be proud of. When it comes to being a vegan, in America (especially if you live in beef-eating Texas), it’s a challenge.


Celebrity Vegans:  Senator Cory Booker

There are many celebrities in the entertainment business who tout their vegan diet and try to influence others to make that change. I consider politicians a “type of celebrity” and they can also be influencers. However, Senator Cory Booker insists that he would never use his official public position to try to convert anyone else. Nevertheless, kudos to Cory Booker, an African-American Senator who is currently running for President in the 2020 Election. He is an outstanding role model, a shining example and proof positive that becoming a vegan is definitely doable. I mean … African-Americans are not known for preparing vegan-oriented meals. For him to make that kind of dietary change, it could not have been easy. Go bro!

Fast Food Restaurants in USA Should Have More Vegan Dishes

As I said, I have not fully changed over to a vegan or plant-based diet but it’s not for lack of recipes. Many of my online vegan friends share their recipes for breakfast, lunch, dinner, desserts, and snacks that you can make for yourself at home. But what about eating out? Like most Americans, I often eat at fast-food restaurants. I am of the opinion that it certainly wouldn’t hurt for America’s fast-food restaurants to add some vegan dishes to their menu. I know that it can be done because Wendy’s restaurants in India have paneer on their menu. They don’t have that in the USA. But they could and they should. If they did I would order it when I’m going through the drive-through! LOL.

Buddha Bowls Make Switching to Vegan Easy

My significant other is a YouTube junkie and he loves watching the cooking videos. Since we share the same bedroom I usually end up watching those videos with him. There is a wonderful YT channel called Tish Wonders and in one of her instructional videos, she prepares 3 mouthwatering Buddha Bowls. Her last recipe is my favorite. I personally believe that for someone to make the transition to a vegan diet, starting out by eating Buddha bowls for lunch or dinner is the best way! It’s an opinion, of course. But a very reasonable opinion. Don’t you agree?



Final Tip About Becoming Vegan

Changing over to a vegan diet is a good thing. But some people might make unhealthy decisions. Carrie Forrest, MPH in Nutrition, published a very informative article about 8 vegan diet dangers and she cautions that one of them is irreversible. Before making any major diet and nutrition changes, you may want to seek professional medical advice.

    Mystery Oreo Cookies Taste Like What?

    Please!  Please!  Please!  NO!  I'm not imitating James Brown, the late great godfather of soul.  But I am begging!  Please!  Oreos are as American as apple pie!  Per Wikipedia:
    In the United States, they were sold for 25 cents a pound (453 g) in novelty cans with clear glass tops. The first Oreo was sold onMarch 6, 1912, to a grocer in Hoboken, New Jersey. The Oreo Biscuit was renamed in 1921, to "Oreo Sandwich." A new design for the cookie was introduced in 1924.

    Please don't mess with Oreos!




    During the year (2017), there was a controversy about rainbow Oreos.  I survived it.

    Now Oreo reveals its mystery flavor and "many tweeted that the cookie tasted like Fruity Pebbles or orange creamsicle".  

    WHAT??!  I object!

    Whatever!  Forget about it!  ☺❤

    People do have different tastes and there is lots of food diversity to go around the world ten times over.  As long as Oreos can be used for world peace, it's all good.

    Rainbow-colored Oreo filled with controversy ~ Whatever!!

    When it comes to rainbows, nobody loves them more than me.  Have loved rainbows all my life and don't plan to stop even if people try to whip up a controversy surrounding them.  That's how I feel about rainbows.  




    First I saw a tweet posted by @ItsFoodPics, and then saw a YouTube video titled "Rainbow-colored Oreo filled withcontroversy".  Seriously?

    Controversy?  Oh no!  More like extreme upset!

    I'm extremely upset because when I tried to shop for rainbow Oreo cookies online I couldn't find them!!  WHAT??!!  They're not for sale!!  WHY?!


    How I feel about rainbows is the same way I feel about Oreo cookies.  Don't even think of trying to separate me from some Oreos and a glass of cold milk. 💕



    I'm making a public statement. It's a shout out!  Nobody, anywhere in the world, should ever use rainbows or Oreo cookies to stir up controversy.


    Oreos can be used for world peace!
