When You Say 'Eat Healthy', I Think 'Eat Salad'

People (especially me) always associate healthy eating with salad. My mother rarely served salads with our meals. They were meat, starch, and vegetables. She never served us a salad (like lettuce and tomatoes), nor did we get dessert. We didn't complain. I got used to not eating salad.  

Then I became an adult and went to university and found out that salad was "expected".  Except for this one guy that I knew.  He kept saying salad was "rabbit food" and wouldn't eat it.  Not me.  When I went to the cafeteria I could eat as much salad as I wanted.  And I did!  Do you know why?  Because it was "healthy" and I could eat a lot of it!  It was one of the few foods that I could eat a healthy amount of and I didn't gain weight.  

So whenever I gained a few extra pounds because I was wolfing down too many pizzas with my friends late at night, I went on a diet and ate salads for lunch and dinner for the next two weeks. The pounds came off easily. That was THEN (1970s). This is now (2021). The pounds don't come off so easily now, but I still enjoy eating salads. I also enjoy collecting salad recipes and sharing them. I hope you like these!

Do you like Indian food? I watch a lot of cooking shows and videos. One thing I noticed about Indian cooking is that they really know how to blend herbs and spices and do amazing things to enhance the flavor of vegetables. Whether the veggies are cooked or eaten raw in a salad, they are so tasty.

Final share.  I know some people don't like kale. They complain that it's too tough and chewy for a green leafy vegetable. So, just in case you don't like eating kale, here are some “kale substitutes”.  Use them instead of sale and enjoy your salad anyway!

Choose Sides: How Do You Like Your Green Salad? Fruit or No Fruit

Been married to my husband for over 40 years. This is a long-standing DIVIDE. My husband says fruit has no place on a bed of lettuce or other greens used to make a salad. I say all green salads taste better with fruit - nectarines, pears, strawberries, raisins, mangos! Love that sweet taste. He says "Forget about it!" This coming from the man who taught me to eat carrot and raisin salad.

Whose side are you are you on? 

Fruit is fantastic in a salad. Yes??

Foodie Friday : Winter Salad Binging

There's #FoodieFriday, #FollowFriday, #FriendlyFollow … whatever! It's the weekend!  Just pick a food and drink topic to share and run with it! 



Connie Guttersen, author, dietitian, nutritionist, a lady on Twitter (@ConnieGuttersen) inspired me to pick salad for my topic.  She shared a Tweet (below) about all the different kinds of lettuce that are “worthy”.  Appreciated the info, but from there it was a leap into “winter salads”. Why? Because during the cold months, salad is not always on my menu. Bowls and bowls of warm and hearty soups. Yes!  But salad? Not so much.  That has to change.

Tomato, Peach and Whipped Ricotta Salad (Guest Post)

Tomato, Peach and Whipped Ricotta Salad

INGREDIENTS

2 tablespoons red wine vinegar

1 1/2 tablespoons extra virgin olive oil

400g tomato medley mix, halved

2 medium tomatoes, thinly sliced

3 yellow peaches, stones removed and discarded, cut into thin wedges

375g fresh ricotta

3/4 cup plain Greek-style yoghurt

1 small garlic clove, crushed

1/4 cup pistachio and thyme dukkah, plus extra to serve

1/2 cup fresh basil leaves


METHOD

Step 1

Whisk vinegar and oil in a large bowl until well combined. Season. Transfer 1 tablespoon of mixture to a small bowl and reserve. Add tomatoes and peaches to large bowl. Gently toss to combine.

Step 2

Process ricotta, yoghurt, garlic and dukkah in a food processor until well combined. Season.

Step 3

Spread ricotta mixture over base of a large serving platter. Drain tomato mixture, discarding liquid. Arrange over ricotta mixture. Top with basil and extra dukkah. Drizzle with reserved vinegar mixture. Serve.
