When You Say 'Eat Healthy', I Think 'Eat Salad'

People (especially me) always associate healthy eating with salad. My mother rarely served salads with our meals. They were meat, starch, and vegetables. She never served us a salad (like lettuce and tomatoes), nor did we get dessert. We didn't complain. I got used to not eating salad.

Then I became an adult and went to university and found out that salad was "expected".  Except for this one guy that I knew.  He kept saying salad was "rabbit food" and wouldn't eat it.  Not me.  When I went to the cafeteria I could eat as much salad as I wanted.  And I did!  Do you know why?  Because it was "healthy" and I could eat a lot of it!  It was one of the few foods that I could eat a healthy amount of and I didn't gain weight.

So whenever I gained a few extra pounds because I was wolfing down too many pizzas with my friends late at night, I went on a diet and ate salads for lunch and dinner for the next two weeks. The pounds came off easily. That was THEN (1970s). This is now (2021). The pounds don't come off so easily now, but I still enjoy eating salads. I also enjoy collecting salad recipes and sharing them. I hope you like these!

Do you like Indian food? I watch a lot of cooking shows and videos. One thing I noticed about Indian cooking is that they really know how to blend herbs and spices and do amazing things to enhance the flavor of vegetables. Whether the veggies are cooked or eaten raw in a salad, they are so tasty.

Final share.  I know some people don't like kale. They complain that it's too tough and chewy for a green leafy vegetable. So, just in case you don't like eating kale, here are some “kale substitutes”.  Use them instead of sale and enjoy your salad anyway!

Food and Drink : Veggie Spotlight : Veggie Substitutes

Is there a particular dish that you would absolutely love IF ONLY …

If only this particular recipe did not have this particular vegetable, I'd eat it all the time!

Face it. When it comes to vegetables, there are certain veggies you either love 'em or hate 'em.

I'm that way about okra. Oh yeah! I know all about fried okra, gumbo, and all those wonderful recipes where okra is the main ingredient.

For years, there were certain dishes I would avoid just because of the okra. Since I didn't really get into cooking until I got married and had to cook for my family to live, I never really thought too much about varying recipes or changing things up a bit.

Hey! Gumbo is made with okra. IT'S THE LAW!! Right?

Of course, when I look at it I realize that I was just not being flexible. Common sense. Some people have food allergies. They have to learn how to substitute certain foods for other foods.
~ Substitution Guide

But even if you don't have a food allergy, there are just some veggies you don't like! PERIOD!! And you're not flexible when it comes to that specific vegetable. :D

So! For me … since I don't really like (slimy) okra all that much, I found that zucchini is a great substitute veggie. Whenever I see a dish I want to try and it says okra, I go right out to the grocery store and buy zucchini! LOL.

(NOTE: Others have recommended asparagus or broccoli florets as okra substitutes. I respectfully disagree.)

Food Blurb: Traditional Meal on the Sabbath

I am always interested in learning about world cuisine.  I especially like Jewish food or Israeli cuisine.  In a social community where I am an active member, people love to share food-related posts.  One of the members, Vasya007, shared a post about cholent or hamin (see below).  I was inspired to look up some recipes and additional information..

“Cholent or hamin is a traditional Jewish stew. It is usually simmered overnight for 12 hours or more, and eaten for lunch on Shabbat. Cholent was developed over the centuries to conform with Jewish laws that prohibit cooking on the Sabbath.”  (Wikipedia)

My mother and her siblings (her brothers and sister, my aunts and uncles) have all passed away. All I have now are my memories. One fond memory that I have of one of my aunts is that her favorite way to drink coffee was a tall glass of iced coffee. My sister always loved iced tea. I had no idea people could drank iced coffee. Imagine my surprise! She didn't make it fancy. Just some coffee, cream, sugar and lots of ice. If you happen to be an iced coffee lover, I found some recipes to take your coffee loving to another level.

Which Clam Chowder is on Your Menu?

Do you like clam chowder? New York OR New England? Manhattan or Boston?  Red OR White?

I prefer the white or New England clam chowder. But I'll eat either one that's served to me.

New York vs. New England: Who has the better clam chowder?

New England Clam Chowder - Spend With Pennies

* * *

NOTES:

Sometimes people call New England clam chowder Boston clam chowder. So if you hear somebody say Boston clam chowder, it's just New England clam chowder by a different name. But I've never called it Boston chowder.  Also, I have never called Manhattan clam chowder, New York chowder.  Come to find out there is a Long Island clam chowder which combines "two types of clam chowder: New England and Manhattan" and results in a "creamy, tomato-based clam chowder".

Some recipes don't add corn. But I add corn to mine.  I thought I was being clever.  Plus I knew my kids liked corn.  However, a little food history research revealed that earlier chowder recipes also added corn.

If you don't have clams, you can make it vegetarian (and then you'll really appreciate the addition of corn to the recipe).

  • "Chowder is a type of soup or stew often prepared with milk or cream and thickened with broken crackers, crushed ship biscuit, or a roux. Variations of chowder can be seafood or vegetable."  (Wikipedia)
  • "The word chowder is a corruption of the French chaudière (“cauldron”), and chowder may have originated among Breton fishermen who brought the custom to Newfoundland, whence it spread to Nova Scotia, New Brunswick, and New England."  (Brittanica)
  • " ... a soup is usually made with stock or broth and can have vegetables, meat or fish as ingredients and is generally not very thick. A chowder may have the same ingredients, but is more chunky, creamy and thick, much like a stew." (Soup vs Chowder)

Baked Butter Garlic Chicken Wings

These baked butter garlic chicken wings made the perfect game day treat last week. You don't have to wait for a game day to enjoy these. Serve these for a nice appetizer or snack at your next party or just a snack for the family. It's no secret that I'm a huge fan of garlic.

Italian Peasant Soup

We are certainly in the cold season now, and when it gets cold outside we like our soups. There is nothing better than serving your family a hearty and healthy bowl of soup. I like all kinds of soups, especially in the winter months, which happens to last a long time in here in Western New York.

Cast Iron Skillet Pork Chops

It's winter here in Western New York, and there is nothing better to get you through those cold days than some good fashioned comfort food. I decided to make some cast iron skillet pork chops. This is another quick and easy meal to put on the table after a long day at work.

ATTN: Newbie Cooks! Best Seasonings and Cookbook for Cajun and Creole Cuisine

If you have ever been to New Orleans, Louisiana US, then you know that region is known for its Cajun and Creole cooking.  There is a difference between Cajun and Creole cooking.  Some say Cajun dishes are spicier.

But I say no matter which ... it's all good!

Even though I have stood at a stove for 40+ years, my culinary skills are still at the newbie level.  Dining out at "authentic" restaurants or even ordering for delivery is usually not an option.  That's why I find shortcuts to creating the taste of a particular cuisine.  I am happy to recommend two brands of seasonings for those who want to prepare their own Cajun or Creole dishes.  The official websites for each of these companies have a section dedicated to recipes.  But you might also find this cookbook helpful: The Easy Creole and Cajun Cookbook: Modern and Classic Dishes Made Simple by Ryan Boudreaux.

(NOTE:  Read free with your Kindle subscription OR ... the paperback book is less than $10 so it would be a great idea for a white elephant gift exchange. 🎅)

Best Seasoning for Cajun Cooking:  Slap Ya Mama!

Yes, there is a difference between these two types of cuisines, but for my palette, there is no difference. Every dish I have ever tried whether it was Cajun or Creole, it was delicious.

But I have only been to New Orleans once and it is likely I will never visit again.  If you are like me and you don't live in New Orleans but you want to try to make your own Cajun food, use slapyamama seasonings.  You can shop for their products via the Amazon store OR go directly to their official website. You can also find recipes on the website.  I met the company owner through Facebook years ago. They sent me free samples of their products to try. Even though the Original Cajun Blend is the best seller, my favorite is the Cajun seasoning for fish fry.  This company was founded in 2001 and is owned by
The Walker family, (TW, Mama Jen, Jack, Joe, Tana, Andi, and Ruby).

Best Seasoning for Creole Cooking:  Tony Cachere

Creole refers to people who are of mixed European and African descent (A little French, a little Spanish, a little Afro-Caribbean, etc.). That specific group of people made their home in Louisiana USA. (Just ask Beyoncé Knowles, the Creole Queen.) They have their special style of cooking which is referred to as Creole cuisine.

If you have ever tasted Creole recipes and you want to make your own, Tony Chachere is one of the best products on the market. They have been in business since the 70s, about half a century.  I discovered the Tony Chacere brand because one of my children bought a can of the seasoning home from the local grocery store. He didn't want to use the herbs and spices in my kitchen cabinet for his cooking, so he bought his own flavorings.

Once I tried their Original Creole Seasoning, I was hooked! I use it to season meat, in my rice dishes, and on my veggies.

For those who may have to watch their salt intake, they have No-Salt seasonings.  If you can not find their products at your local grocery store, go to Amazon OR to their official website.  Tony Chachere is a real person. He is retired now but his business is still thriving.

Desserts Made With My Favorite Ingredient. Cool Whip!

Desserts! YUM! There are very few people in the world who will refuse a delicious dessert.
  • Parents tell their kids: “If you eat all your vegetables, you’ll get dessert!” or “Finish your food or you won’t get any dessert!
  • Kids grow up and tell themselves: “Life is uncertain. Eat desserts first.” ☺

Sometimes It Is OK to Eat Desserts

If you live in the USA, then you know that there are certain times of the year when eating desserts is totally OK. From October through December, because many holidays are celebrated, indulging in and enjoying desserts is expected. Is it any wonder that these 3 months are my favorite time of the year?

A few years back I signed up to receive a free newsletter published by FaveSouthernRecipes. This publication supplies wonderful recipes that are submitted by various people. The contributors could be professional chefs or everyday cooks. One of the issues was loaded with recipes for desserts. There were twelve (12) easy recipes that used my favorite secret ingredient Cool Whip.
  • REFERENCE: “12 Easy Southern Recipes with Cool Whip.” Edited by Terrie Hayes, FaveSouthernRecipes.com, Prime Publishing, LLC., 7 May 2015, www.favesouthernrecipes.com/Recipes-for-Dessert/Easy-Southern-Recipes-With-Cool-Whip.
Elvis Presley’s love of bananas, peanut butter, and bacon is legendary! One of the recipes is called the “Ode-to-Elvis Poke Cake”. Here is the description provided at the site: “The King’s favorite flavor combo of bananas, peanut butter, and bacon comes together in this easy Southern recipe with Cool Whip. Moist yellow cake (with peanut butter added) is topped with banana cream pudding, Cool Whip, crumbled bacon, and a peanut butter glaze.”

What??!!! This should be illegal. LOL.

Do You Like Cool Whip?

Who likes Cool Whip? Believe it or not, this is a question that causes a divide. There are those who view it as fake whipped cream and say it’s advertised as “imitation whipped cream”.

I say: Cool Whip is real enough for me!

There are many Americans, including me, who are very pleased that William H. Mitchell, a chemist who worked at General Mills, invented this food product. I can quantify “many”. Statista.com reported that “126.43 million Americans consumed Cool Whip in 2018”.

Foodie Friday: What is your favorite sweet treat? (Mine is cheesecake.)

We all like a delightful sweet treat every once in a while. Call it a guilty pleasure. Call it an indulgence. Call it pampering yourself because you earned it, you deserve it, you're worth it!

There are so many different reasons for enjoying a sweet treat AND there are so many different sweet treats to choose from. Surely everyone has a favorite. Mine is cheesecake.

There was once a time when I could just say cheesecake. But now the question is asked: Americancheesecake or Japanese cheesecake? I'm like: WHAT??

OK. So now my response is modified. My favorite sweet treat is American cheesecake. Although, Japanese cheesecake is pretty good too!

Cheesecake is my favorite sweet treat. What's yours?

  1. Cheesecake (American or Japanese)
  2. Ice cream or Sherbet
  3. Popsicles
  4. Pudding
  5. Candy
  6. Jello
  7. Chocolate ANYTHING!
  8. Pie or Cake (other than cheesecake)
  9. Not on the list (See comments)
  10. Don't like sweet. Prefer SALTY.
Please leave comments.

With the exception of one of the tweet shares, the rest of the tweets focus on Japanese cheesecake (in case you're interested).

Foodie Friday: Upside Down Cakes

Do you remember when you first learned how to cook?  Do you remember when you made a dish or a dessert that you thought was impossible to make with your limited culinary skills but when you followed the recipe you ACED IT!!

I remember when I made my first Pineapple Upside Cake.

I was a teenager and I was trying to teach myself how to prepare meals for my family, including dessert. I was quite proud of my cake even though I used a cake mix. I had not realized that the part of the recipe I thought was the most difficult ~ that is, getting the pineapple on the bottom to be on the top.  It was so easy! Once I learned what to do I started thinking: 'I can probably do this same recipe with fruit other than pineapple.'  I thought that but I've never done it! I'm not sure what fruit I would substitute for the pineapple.  Although I have seen a cooking videos upside down cakes for other than pineapple.

Below is a link to a great recipe for pineapple upside down cake, if you have never baked one.  And ...???  I'm just curious.  If you have already made such a cake, have you ever made an upside down cake with a fruit other than pineapple??  Mango? Nectarines? Peaches?  Bananas? Apples? Rhubarb?  Some exotic fruit that grows in abundance where you live?

What Kind of Broth Do You Use in Your Ramen Noodles?

Ramen noodle, the instant noodle that the whole world now loves to eat, was invented by Momofuku Ando (1910 - 2007), a Taiwanese-Japanese inventor in Japan. It was first marketed in 1958 by his company, Nissin. Incredible! I can't remember exactly when I started eating Ramen noodles. I think it was in the 90s. I could get 5 packages for a dollar at the grocery store. I could eat a package every day. That's 20 cents for a meal. Why not?

At first I just followed the package directions and ate them that way. Later on I learned you could add meats, vegetables, eggs, etc. and come up with all kinds of recipe variations.

My favorite addition to Ramen noodles is cabbage; preferably bok choy; and also mushrooms. My daughter likes to add a bolied egg to the broth.

The broth! That's another thing I like about eating Ramen noodles. I prefer chicken broth. My daughter likes beef broth. This recipe makes a broth out of black tea and ginger. Interesting. I never even thought to change the broth flavor ... UNTIL NOW!

Desserts: "Yolka" with Mango and Passion Fruit Confiture (Guest Post)

Exotic fruits like mango and passion fruit can turn a dessert in a gourmet delight.  You are going to love this recipe.

dessert

"Yolka" with mango and passionfruit confiture

Ingredients: ⠀

⠀ 📌Merengue:
Egg white 150 g
Granulated sugar 300 g
Lemon juice 1 tsp

⠀ 📌Cream mascarpone:
Mascarpone 150 g
Cream 33% fat 100 g
Powdered sugar 1 tbsp (optional)
Vanilla extract 1 tsp

⠀⠀ 📌Filling:
Mango jam - passion fruit 150 g

Preparation:

STEP 1. Meringue:
Heat the protein with sugar in a water bath, stirring constantly, until the sugar crystals dissolve. Remove the protein mass from heat, beat with a mixer until stable peaks. At the end of whipping, add lemon juice. On pastry parchment, draw 3 circles of the desired diameter, turn over and place on a baking sheet. Spread the protein mass with a silicone spatula (or spoon) within the circles drawn, making a small indentation in the center of the circle. Place the baking sheet in an oven preheated to 150 ° C and immediately reduce the temperature to 100 ° C. Bake for ~ 1.5 hours. The exact baking time and temperature range depend on the power of your oven. The meringue should not brown, but should have a hard crust. Cool the finished meringue cakes. ⠀

STEP 2. Cream mascarpone:
Using a mixer, beat the chilled cream with mascarpone and vanilla extract until stable peaks (add powdered sugar if desired). ⠀

STEP 3. Assembly:
Put the cream on the meringue cake, then add a layer of confiture. Repeat with the following cakes. Place the finished cake in the refrigerator for ~ 1 hour.

❗️ Notes: To prevent the pastry parchment from slipping on the baking sheet, grease the edges with whipped protein mass and glue it to the nasty. Bon Appetit!
