Food Blog Spotlight: Custom Cakes by Rainbow Nourishments (Raw Vegan Cake Maker)

Was watching a health infomercial and the gentleman was supplying a recipe for a cake.  He showed the cake and then said we wouldn't believe what the ingredients were.  Have to admit when I saw the recipe I thought that cake was the best disguise I've ever seen.  Indeed, until I had to change my eating habits, it never occurred to me that so many foods that I loved to eat could be prepared in a completely different way and still be enjoyed.  Who knew?  

Evidently, the vegans knew and were way ahead with this knowledge.  In one of my previous posts, I shared my love of cake ("Which Cultures Make the Best Cakes?").  Today while surfing the Internet, stumbled across these wonderful creations by a food blogger named Anthea, who published a blog is RainbowNourishments.com.  She makes custom cakes.  Sure!  There are a lot of custom cake makers out there.  But this lady specializes in raw vegan cakes that are indescribable!

This recipe captures pretty much everything that I love about cakes. I love taking a bite of a sponge cake and squashing the air out of it in my mouth (ok, that sounds weird and confronting, but it's the truth so I'll stick with it). I love the simplicity and smoothness of raw cakes.

Whoever invented nicecream (aka icecr eam made of blended bananas) is a genius.I thought: what if I could combine my current favourite food (nicecream) with my favourite concept (rainbows) into something that could enjoy at ANY time of the day. This marbled nicecream cake reminds me that adults CAN have fun with their food.

Foodie Friday : Mushroom: Real Food of Fantasy and Fairy Tales

When one says the word “mushroom” it might provoke various thoughts. Psychedelic dreams.  Fantasy and fairy tales.  Tiny homes for whimsical creatures.  A meat substitute for vegans and vegetarians.

For me, it provokes a memory of a romantic dinner date.  My first experience tasting a mushroom was when my late husband (my fiancé at the time) prepared dinner for me.  Steak with mushroom gravy. 

Before meeting my husband, I avoided mushrooms for two reasons.

~Number 1:  My mother never used them in any of her recipes.  Mom didn’t cook them. (???)  Maybe they don’t taste good.  (O.o)

~Number 2:  The way people describe mushrooms.  Fungus.  Toadstool.  They don’t make the mushroom sound appetizing or visually appealing.


However, many cooks and chefs use the mushroom as the main ingredient in their recipes.  Foodies are happy to share photos of amazing dishes where mushrooms are the star of the show.  

As for being visually appealing, mushrooms are quite beautiful. 

Artists often use them to illustrate fantasies. 

Nature photographers go insane! They capture incredible pics just roaming through the woods or the fields.

My first time eating mushrooms was over 40 years.  But from that day forward, I didn’t need convincing to make mushrooms a part of my diet.  However, in case you do, perhaps this health article by Popular Science will persuade you.  “4 reasons you should eat more mushrooms”.


It's good to know these reasons why, but the most important thing everybody needs to know about mushrooms is that some of them are NOT edible.  No doubt you will find these information links useful.

    Celebrities Who are Vegan

    It's the New Year.  Everybody is thinking about making changes to their diet.  Right?  Well!   Most people are thinking that.  Sharing a link to an interesting article.

    Frankly, I could never become vegan. But I have cut down on meat and I am eating lots more fruits and veggies these days. I don't know about where you live but Where I live food prices are going up and the grocery store shelves are kind of bare. You could say my change in diet was simply adapting to whatever food is available and reasonably priced.

    The World Health Organization (WHO) recommends eating a minimum of 400g of fruit and vegetables a day to lower the risk of serious health problems. They say you should eat That's 5 portions of fruit and vegetables per day. A portion of fruit or vegetables is 80g.

    This year I am going to try to DRINK my fruits and veggies, using my blender and making smoothies.

    When You Say 'Eat Healthy', I Think 'Eat Salad'

    People (especially me) always associate healthy eating with eating salad.  My mother rarely served a salads with our meals.  It was a meat, a starch, and a vegetable.  She never served us a salad (like lettuce and tomatoes) nor did we get dessert.  We didn't complain.  I got used to not eating salad.  

    Then I became an adult and went to university and found out that salad was "expected".  Except for this one guy that I knew.  He kept saying salad was "rabbit food" and wouldn't eat it.  Not me.  When I went to the cafeteria I could eat as much salad as I wanted.  And I did!  Do you know why?  Because it was "healthy" and I could eat a lot of it!  It was one the few foods that I could eat a healthy amount of and I didn't gain weight.  

    So whenever I packed on a few extra pounds because I was wolfing down too many pizzas with my friends late at night, the next 2 weeks I went on a diet and ate salads for lunch and for dinner.  The pounds came off easily.  That was THEN (1970s).  This is NOW (2021).  The pounds don't come off so easily now, but I still enjoy eating salads.  I also enjoy collecting salad recipes and sharing them.  Hope you like these!

    Do you like Indian food? I watch a lot of cooking shows and videos. One thing I noticed about Indian cooking is that they really know how to blend herbs and spices and do amazing things to enhance the flavor of vegetables. Whether the veggies are cooked or eaten raw in a salad, they are so tasty.

    Rooting for Potatoes: The Spud Makes A Comeback

    Forget low-carb diets and Atkins; those sweet, succulent spuds are once again finding their place among meat and vegetables at the dinner table.To celebrate its return to center stage, Kita Roberta of Girl Carnivore is recognizing the health benefits of a plant-based diet, while still including your favorite proteins.To that end, Girl Carnivore has created a recipe that is packed with carrots, beets, kale and Idaho potatoes. Add the sweetness of maple aioli and you’ve got yourself a good-for-you meal. 

    Roasted Roots and Chicken Power Bowl with Maple Aioli 

    * 4 Russet Idaho potatoes, chopped into 1/2-inch cubes
    * 3 carrots
    * 1 turnip, peeled, cut in half lengthwise, and then cut into wedges
    * 1 red onion, cut into wedges
    * 1 cup butternut squash, peeled and chopped
    * 2 beets, rinsed, peeled, cut in half and then cut into wedges
    * 4 teaspoons olive oil, divided
    * Salt and pepper
    * 3 sprigs fresh thyme, removed from stem
    * 3 cups Swiss chard, removed from stem and chopped
    * 1 garlic clove, minced
    * 1 cup cooked rotisserie chicken, chopped 


    For the Maple Aioli 
    * 3 tablespoons fresh mayonnaise
    * 1 tablespoon maple syrup
    * 1/4 teaspoon cinnamon

    Preheat the oven to 425 degreeF. Line a baking sheet with foil and spray with cooking spray.  Toss all of the vegetables in olive oil and sprinkle with salt and pepper.Arrange the vegetables in a single layer on the baking sheet. Sprinkle with thyme. Roast in the oven for 25-30 minutes, until golden and fork-tender, flipping once, halfway through.  Meanwhile, heat the remaining olive oil in a skillet over medium-heat. Sauté the Swiss chard with the chopped garlic until wilted, about 10 minutes. Season with salt and pepper to taste.  Whisk the mayonnaise with the maple syrup and cinnamon until combined.  Spoon into a serving dish.  Divide the chard evenly in serving bowls. Top with the roasted vegetables and chopped rotisserie chicken. Serve with the maple aioli on the side for dipping.

    Mark Your Calendars for November 1st to Celebrate World Vegan Day!

    Happy World Vegan Day to all of those who are vegans. World Vegan Day has been celebrated every year on November 1st since 1994. 

    To my vegan friends, I know that you are dedicated and committed to encouraging everyone to convert to a plant-based diet. Although I must confess that I have not fully crossed over, some significant changes have been made in my diet that you would be proud of. When it comes to being a vegan, in America (especially if you live in beef-eating Texas), it’s a challenge.


    Celebrity Vegans:  Senator Cory Booker

    There are many celebrities in the entertainment business who tout their vegan diet and try to influence others to make that change. I consider politicians a “type of celebrity” and they can also be influencers. However, Senator Cory Booker insists that he would never use his official public position to try to convert anyone else. Nevertheless, kudos to Cory Booker, an African-American Senator who is currently running for President in the 2020 Election. He is an outstanding role model, a shining example and proof positive that becoming a vegan is definitely doable. I mean … African-Americans are not known for preparing vegan-oriented meals. For him to make that kind of dietary change, it could not have been easy. Go bro!

    Fast Food Restaurants in USA Should Have More Vegan Dishes

    As I said, I have not fully changed over to a vegan or plant-based diet but it’s not for lack of recipes. Many of my online vegan friends share their recipes for breakfast, lunch, dinner, desserts, and snacks that you can make for yourself at home. But what about eating out? Like most Americans, I often eat at fast-food restaurants. I am of the opinion that it certainly wouldn’t hurt for America’s fast-food restaurants to add some vegan dishes to their menu. I know that it can be done because Wendy’s restaurants in India have paneer on their menu. They don’t have that in the USA. But they could and they should. If they did I would order it when I’m going through the drive-through! LOL.

    Buddha Bowls Make Switching to Vegan Easy

    My significant other is a YouTube junkie and he loves watching the cooking videos. Since we share the same bedroom I usually end up watching those videos with him. There is a wonderful YT channel called Tish Wonders and in one of her instructional videos, she prepares 3 mouthwatering Buddha Bowls. Her last recipe is my favorite. I personally believe that for someone to make the transition to a vegan diet, starting out by eating Buddha bowls for lunch or dinner is the best way! It’s an opinion, of course. But a very reasonable opinion. Don’t you agree?



    Final Tip About Becoming Vegan

    Changing over to a vegan diet is a good thing. But some people might make unhealthy decisions. Carrie Forrest, MPH in Nutrition, published a very informative article about 8 vegan diet dangers and she cautions that one of them is irreversible. Before making any major diet and nutrition changes, you may want to seek professional medical advice.
