Food Blurb: Gourmet Sleuth is an Excellent Cooking Resource (Bye Bye!) [UPDATE]

Have you ever had a recipe that required a certain ingredient but that particular ingredient is not readily available where you live OR if it is available, it's really expensive.  This website called Gourmet Sleuth will share ingredients that you can substitute.  For example:

  • If you don't have radicchio, use endive or arugula.
  • If you don't have jack fruit, use plantains, summer squash or papaya.

If the recipe calls for something exotic like Bhutanese Red Rice, you can substitute Black rice or brown rice.  (Found a recipe at a site other than Gourmet Sleuth.)

The site also has HAD a blog and shares recipes, conversions, and articles.  Because I am interested in world cuisine, I really like the article section titled "Ethnic, Unique Foods, Ingredients".  Could not find another site.  Can only refer you to Amazon.  (Not like that's a bad thing.  There's actually some pretty cool stuff there. 😀)

Foodie Friday : Winter Salad Binging

There's #FoodieFriday, #FollowFriday, #FriendlyFollow … whatever! It's the weekend!  Just pick a food and drink topic to share and run with it! 



Connie Guttersen, author, dietitian, nutritionist, a lady on Twitter (@ConnieGuttersen) inspired me to pick salad for my topic.  She shared a Tweet (below) about all the different kinds of lettuce that are “worthy”.  Appreciated the info, but from there it was a leap into “winter salads”. Why? Because during the cold months, salad is not always on my menu. Bowls and bowls of warm and hearty soups. Yes!  But salad? Not so much.  That has to change.

Food Blurb: What Should Kids Drink?

When it comes to growing children, it's extremely important to choose drinks that support their health and development. Based on my research (and life experience), here's a list of the best drinks for children, in order of what's generally considered the best.


Water: The top choice for hydration, it has no calories, sugar, or additives.  My mom and dad used to call water “Adam's ale” and they always made sure to keep a pitcher of water in the refrigerator.  I also drank water from the kitchen faucet ... without a filter!  Can you believe it?


Plain Milk: Provides essential nutrients like calcium, vitamin D, and protein.  
My mom always kept milk in the fridge because we ate a lot of cereal. Although? The amount of sugar in those boxes of cereal? I'm not sure. IT might have canceled out the benefits of the milk.


100% Fruit Juice: Limited amounts can be beneficial, but it's best to avoid juices with added sugars.  The only
 juice I remember drinking a lot growing up was orange juice. Back in the day, we had a milkman who delivered, and either that was the only juice he sold, or the only juice my mom bought. I really loved pineapple juice so whenever I got to enjoy it (usually around the holidays), it was a special treat. These days it seems like everybody is into “juicing” and blending fruits and veggies into a drink; or you can buy from the store. There are lots of fruit juices with carrots or beets. That's cool! But I prefer my fruit juice separately.


100% Vegetable Juice: Similar to fruit juice, but with added vitamins and minerals.  
It used to be there was only V8 tomato juice and I tried my best to avoid it. LOL. Now V8 has a lot of variety in their vegetable juice product line. Of course, you can buy a juicer and make your own. Green drinks are very popular. I'm guessing that kids will drink it.


Plant-Based Milk Alternatives: Suitable for children with allergies or dietary restrictions, but ensure they are fortified with necessary nutrients.  
Some kids are lactose-intolerant. In my home, I gave birth to lactose-intolerant children. They got it from their daddy! My late husband said when he was growing up they gave him goat milk or soy milk. If it weren't for him and having his children, I might have never known there was such a thing as Plant-Based Milk.


Flavored Milk: Can be an occasional treat, but it's better to stick with plain milk for daily consumption.  Occasional? Not for me! My mom kept milk in the fridge but he also kept Nestlé Quik powder in the pantry. If I had to drink milk in a glass it was going to be chocolate! For our school lunches, we had a choice: white or chocolate. I always picked chocolate! I thought those were the only two choices in the world. But there are strawberry, banana, and other flavors.

The point to be made is coffee, tea, sodas or carbonated beverages and fake fruit drinks that have dyes for color and a small percentage of real juice are probably not the “best drinks” for a growing child.  (Although we did drink a lot of Kool-aid.)  But let's see what a medical professional says about it.

If you are familiar with the 1904 novel by O. Henry, then you know it's not about collecting cabbage recipes for kings. 😊  It's just that in my high school Literature class we studied short stories and O. Henry was one of the writers we learned about. It was the year I learned that I liked short stories much better than reading books. You got to the ending quicker! 😊  

  • Cabbages and Kings is a novel by O. Henry, a collection of short stories about political intrigue and corruption in a fictional Central American country. The title comes from the poem "The Walrus and the Carpenter" in Through the Looking-Glass by Lewis Carroll.  (SOURCE)

OK.  Back on point.  This food blurb is about cabbage recipes. 


If your goal is to eat more green leafy vegetables and you like cabbage anyway, then you'll probably enjoy this recipe. It's made with ground beef, but I vary it and use ground chicken or turkey. Also, I omit the cheese topping. For me, that's unnecessary extra calories. You could use a breadcrumb topping as a substitute or no topping at all. You might be able to also vary this recipe using escarole, napa cabbage, collards, or Swiss chard, instead of cabbage. You might try purple cabbage instead of green. Purple veggies are just as good as green!

Why Your New Year’s Resolution Should Be to Eat More Fiber

The start of a new year is a great time to check in with yourself and think about how you want to improve for the year ahead. But unfortunately, many New Year’s resolutions aren’t realistic and wind up lasting just two to three weeks. Here’s a resolution that’s easy to stick to and can also make a big difference in your overall health and wellness: eat more fiber

Fiber can play an important role in reaching your health and wellness goals. 

It’s probably best known for its ability to help keep your digestive system moving, but there are other benefits as well – like helping to promote a feeling of fullness.  Even with fiber’s well-known health benefits, nine out of 10 Americans aren’t getting enough in their daily diet, according to the National Health and Nutrition Examination Survey (NHANES) 2015-2016.  Lauren Harris-Pincus, MS, RDN thinks she knows why.

"Fiber can be confusing," Harris-Pincus explains. "I think many people have experienced tummy trouble when they ate too much fiber and it overwhelmed their digestive system. With a simple strategy of introducing fiber slowly, they can receive all the health benefits without any discomfort."  

The 2015-2020 Dietary Guidelines for Americans recommend that women get 25 grams and men get 38 grams of fiber every day, but most only average 15 grams. Instead of aiming for 25-38 grams on Day One, Harris-Pincus has some tips on how you can make this resolution stick:

* Only increase your fiber intake by three to five grams each day. That way, you give your body time to adjust.

* Mix in high-fiber foods with your regular diet. As you’re ramping up your fiber intake, start by adding fiber to foods you already eat. It could be as simple as adding a high-fiber cereal to a yogurt parfait or adding nuts and berries to your salad.

* Drink more water. Insoluble fiber doesn’t dissolve in water, so make sure you drink plenty of fluids to help carry the fiber through your body. By eating more fiber and drinking more water, you’re helping your digestive system do its job more efficiently.

* Find a great-tasting fiber you love. Instead of viewing fiber as a chore, or something you "have to" eat, find a high-fiber option that you can look forward to eating.

"I think everyone has this idea of fiber as bland and boring," Harris-Pincus says. "But what people don’t realize is that there are tons of great-tasting, high-fiber foods. The easiest place to start is with your morning cereal."  


Fiber One has introduced a fiber-rich cereal that, well, doesn’t taste like a fiber-rich cereal. EXAMPLE:  Fiber One Strawberries and Vanilla Clusters is made with real strawberries and sweet vanilla clusters, but still contains 35 percent of the Daily Value of fiber in every one-cup serving. No pills, nothing to stir, just real food that makes fiber something you can enjoy eating.  And for when you’re ready to increase your fiber intake even more, Fiber One Honey Clusters has 40 percent of the Daily Value of fiber, and Fiber One Original Bran has 55 percent.

Beyond cereal, Harris-Pincus recommends eating whole fruits and vegetables, leaving the skin on things like apples and potatoes. Beans and legumes are another excellent source of fiber, so don’t shy away from the black beans in your fajitas. For easy snacks, popcorn is another fiber-rich option with four grams of fiber in just three cups of popcorn.

"Fiber really is overlooked, which is a shame because it can be this great-tasting, powerhouse nutrient," Harris-Pincus explains. "New Year’s resolutions are usually all about cutting calories or increasing protein, when in reality fiber can do all these amazing things for your body. You just have to start eating more of it to realize the benefits."

Holiday Food: A Collection of Recipes for the Celebration of Hanukkah

I am a Christian but I have many Jewish friends who are celebrating Hanukkah. It is a holiday celebration that lasts for eight (8) days and it has been observed for more than 2000 years. The word Hanukkah means "dedication".  But it is also known as the Festival of Lights.

If you are learning to cook, do you know your caviar?

So tell me. What do you know about caviar? Well? In the old movies I like to watch people usually always have champagne and caviar. Caviar looks like little small beads and comes in different colors. And uumm … only rich people eat caviar because it's really expensive! But if you search online you can find quality but inexpensive caviar that you can give as gift. 

Uh huh.  You know as much about caviar as me.  Cool!  We can learn together.  ☺


Like most foods that we enjoy today, caviar has ancient origins. Of course, the Persians and the Greeks enjoyed sturgeon roe. The word "caviar" comes from the Persian word "khavyar", which means "egg-bearing". And of course, Caviar was once considered a royal delicacy, i.e. food only eaten by the royals and the elites, who had wealth and status. But these days, ANYBODY can order caviar online or shop for it at their local grocery store (it's available at my local grocery stores)


FUN FACTS FOR FOODIES:

Persians created what we now recognize as caviar. They were the first to cure sturgeon roe and also introduced the practice of salting the roe to preserve it.

The Caspian Sea region (Iran, Kazakhstan, Turkmenistan, and Azerbaijan) is known for producing some of the finest caviar (Beluga and Kaluga caviar and other type of caviar). Even today it is home to 90% of the world's caviar. Since this area borders Russia, no surprise it became popular in Russia, where it was a staple at royal feasts and banquets.

In the 19th Century, in the USA, sturgeon was abundant in American waters, especially in the rivers and lakes of the Midwest and East Coast. Would you believe that caviar was often served as a free appetizer in saloons and bars? Supposedly its salty flavor encouraged the customers to drink alcohol. A German immigrant named Henry Schacht get credit for making the United States a major exporter of caviar. He started a business in 1873 exporting caviar to Europe. Would you also believe a lot of that caviar shipped to Europe is then re-imported to the U.S. labeled as "Russian caviar"? (Unfreaking believable!)

At any rate, high demand resulted in an environmental impact: overfishing caused sturgeon numbers dwindled, the price of caviar skyrocketed, and it's back to being a luxury item again.

To help meet the demand AND preserve wild sturgeon populations, alternative sources of roe are being used: salmon, lumpfish, and whitefish. In addition, caviar is produced using sustainable aquaculture practices.

Even so, don't even dream about caviar going back to being an available free bar snack. It is a luxury delicacy, enjoyed by people around the world, and can be easily purchased if you know where to shop or buy.

Caviar has a rich history going from ancient delicacy to modern luxury food, with ongoing efforts to balance demand with conservation.

Four (4) Uncommon Cooking Ingredients Explained (Guest Post)

Below is a short explanation of four (4) uncommon cooking ingredients and how to use them in cooking. 


1.  Clear Jel is a refined cornstarch that reacts better for freezing and canning recipes in particular; cornstarch tends to go cloudy in these situations. Clear Jel is used in the same proportion of cornstarch (1:1) in baking recipes. Like traditional cornstarch and the health store alternatives - arrowroot and potato powder, etc. - this product needs to be combined with the sugar (or flour) called for in the recipe prior to adding to any other ingredients in order to reduce clumps from forming.

2.  Sea salt is healthier than regular table salt; the fact that it requires less processing means it also has a smaller ecological impact. It is a natural source of iodine, which, along with other nutrients, is essential for a healthy sex life. A local herbal consultant once told us that sea salt can also be used in place of Epsom salts in your bathwater.

3.  Tamari is considered to be less salty than soy sauce and is often stocked in health food stores. You can find low-salt versions of both tamari and soy sauce. Tamari sauce, however, has enzymes that aid digestion and promote healthy intestinal bacteria.

4.  Orange Zest, citrus zest or citrus powder are all terms referring to a similar product - to simplify we personally call it 'citrus zest'. It is used to bring out other flavors and to condition flour. Chop lemon, orange or lime peel and allow to dry (or use a dehydrator) - turn this into a powder using a blender or grinder, and store in the cupboard as you would any spice or herb. 1 Tbsp of fresh zest is equal to 1 tsp. of dried; while 1 Tbsp of fresh zest is equal to 6 Tbsp. juice. As such, this one ingredient in the cupboard offers more ways of reducing grocery costs.  Making your own citrus zest at home is a fantastic way to move toward a more frugal kitchen, while reusing "waste" (the peels). 

Now that you know more about these ingredients, hopefully, it will give you the confidence to use them in your kitchen.

Autumn is here! Is a Season Your Reason to Drink Tea?

My coffee addiction often keeps me from drinking and enjoying a cup of tea. But other members of my household love to brew! They are not tea experts (yet!) and are always experimenting with different flavors – from caramel apple to licorice to green tea to black tea to … on and on and on.

I found an interesting blog post written by Ryan Frey who works as a GO TO tech guy for ShareASale, Inc., an established affiliate marketing network corporation. He not only knows his tech stuff but his office co-workers also think of him as a tea aficionado. He must be. Why else would he suggest drinking tea according to the seasons of the year?  In his post, How To Brew Different Tea Varieties for Fall, he recommended five (5) tips for how to enjoy your tea during the autumn season. All excellent advice.  A quick summary of the tips is below.

  • 1. Rooibos or “red tea” ... makes a great neutral base for both sweet and nutty flavors. During the Fall, expect to see flavor blends like chestnut, pumpkin, and chai.
  • 2. Black tea is a totally oxidized (but not “fermented” like Pu’erh tea) version of your everyday tea leaves ... like Earl Grey and English Breakfast.
  • 3. Green and white teas are more delicate, partially or unoxidized tea leaves and buds. ... often fruity, sweet, and complex.
  • 4. Herbal teas or “tisanes” are like rooibos, in that they aren’t from the tea plant at all. They contain alternatives like spices, herbs, flowers, and fruit.
  • 5. Try other brewed beverages like Pu’erh tea and Mate.

Customs, Traditions and Symbols : The Cornucopia

In the USA, since 1863, we have celebrated Thanksgiving Day on the last Thursday of November.



Here is a little bit of background information about this national holiday:

POTUS George Washington’s Thanksgiving Proclamation – Thursday, Nov 26, 1789 proclaimed a day of “public thanksgiving and prayer”. (* Source: The Heritage Foundation)


POTUS Abraham Lincoln proclaimed a National Day of “Thanksgiving and Praise to our beneficent Father who dwelleth in the Heavens”, to be celebrated on the last Thursday in November, even though, at the time, the country was engaged in the Civil War. (** Source: National Archives)


Now to get the highlight of this post. The cornucopia. I love the cornucopia.

A cornucopia, also called “horn of plenty”, is a symbol of a harvest – usually pictured as a goat’s horn overflowing with various fruits like apples, grapes, oranges, etc.; corn on the cob; pumpkin; and some even have flowers.

In America, the cornucopia is a symbol included in our celebration of Thanksgiving Day. People don’t usually like to break with familiar customs and traditions that have been accepted and practiced for years. But if I could, I would champion a change to the traditional filling of the cornucopia. My horn of plenty would reflect a harvest that included exotic or tropical fruits. Pomegranates, mangoes, kiwis, and pineapples are at the top of my list.


As for vegetables? Haven’t really given them much thought. Maybe some zucchini and a bunch of collard greens, kale or Swiss chard! 

What about you? Ever give any thought to refilling a cornucopia? What fruits and/or veggies and/or flowers would go into your horn of plenty? Don’t you think it makes an excellent gift? A customized cornucopia for a friend or family member. A horn of plenty loaded with fresh fruits and veggies that they like!

Foodie Friday : Apples and Pumpkins

Autumn is the season for apples and pumpkins.  My favorite recipes are apple cobbler and pumpkin pie, which (in my humble opinion) are true American holiday cuisine.  I enjoy these desserts for both Thanksgiving and Christmas.

FUN FACTS:

Cobblers originated in the British American colonies.  "The earliest recipe dates from 1824. Apple Cobbler – Cobblers (stewed fruit topped with batter, biscuit, or dumplings) originated in the British American colonies with the term “cobbler” recorded in 1859. Cobblers can be made with any type of fruit or berry and are also known as slumps, grunts, and pandowdy." (SOURCE: M. E. Bond)

A cobbler is not the same as Crisp, Crumble, Betty, Or Buckle?  What's the difference?  "Cobblers are a fruit dessert baked with biscuit-style topping. It's called a cobbler because its top crust is not smooth like a pie crust but rather “cobbled” and coarse. It's usually dropped or spooned over the fruit, then baked. Individual fruit cobblers." "Northeastern Native American tribes grew squash and pumpkins. The Native Americans brought pumpkins as gifts to the first settlers, and taught them the many uses for pumpkin.
