World Cuisine: Four (4) Nigerian Dishes You Must Try (Guest Post)

Nigeria is regarded as the largest black country in the world, having over 150 million citizens and over 250 ethnic groups, with 3 major ones. Each ethnic group has some peculiar cuisines associated with it. Below are some of these foods and how to prepare them.  This article explores some mouth-watering Nigerian cuisines you should try.



1. Ofada rice with stew: Ofada is a small town in the South-Western part of the country. Its residents are known to be rice farmers, hence the rice grown is named after the town. This rice is brownish in colour and sold across the country.

Ingredients: 2 and a half cups ofada rice, 5 cups water, 1 tsp. vegetable oil (optional), 1 tsp. Salt.

Direction to cook includes heat up the 5 cups of water in a pot till it boils, rinsing the rice thoroughly with cold running water and pouring it into the pot of boiling water. Add salt and oil. Thereafter, cook for 35 minutes or until it's ready (soft to eat).

2. Pounded yam and melon soup (egusi): This delicacy is also known among the southwestern Yoruba people. The ingredients for 2 servings include 1 tuber of yam, 2 cups of ground melon, fresh tomatoes, fresh pepper, 1 medium-sized ice fish, Palm oil, onion, stock cube, 1 tsp of salt, 1 small bunch of ugwu leaf.

Directions to cook: Peel, wash, and boil the yam till it's well-cooked. Pound in a mortar with a pestle, mould into balls, and set aside. Add a little water to ground egusi in a pot to form a thick paste with blended pepper, onion, and tomatoes. Stir the mixture and allow it to cook before adding palm oil. Pour in some water to lighten the soup if too thick, stock cubes, salt to tast,e and your fried ice fish. Finally, add chopped ugwu leaf and allow to cook for 5 minutes. Serve pounded yam and egusi soup.

3. Afang soup
is eaten by the Efikis/Ibibio people of Nigeria. This soup has a bit of a bitter taste, but highly nutritious and tasty.

Ingredients are Smoked fish, beef or assorted meat, ground crayfish, periwinkle (optional), Afang Leaves (dry or fresh), Water leaves (Alternatively, lamb lettuce or Spinach), Palm oil, Stock cubes, Fresh pepper or ground dried pepper (to taste), and salt to taste.

Directions to cook: wash and cut Afang leaves, pound or blend them, and set aside. Then, slice the water leaves and set aside. Cook until tender the assorted meat, smoked fish, or beef and stockfish with chopped onions, one stock cube/seasoning cube, and salt to taste. Then clean the dried fish in hot water, remove the bones to avoid choking while eating, and add the fish to the pot of cooked meat. Add the Palm oil, pepper, ground crayfis,h and stock cube to the pot. Mix well and then add periwinkles (if you are using any). Add salt to taste. Cover the pot and leave to boil for about 12 minutes. After 12 minutes, add the Afang leaves, leave to simmer for 3 to 5 minutes, and then add the water leaves. Afang soup is ready to be served hot with Starch, Pounded Yam, Wheat meal, Eba, Fufu, Semolina, and Amala.

4. Tuwo shinkafa is popular throughout the northern parts of Nigeria. It is a unique dish consisting of rice flour or soft, short-grained rice and water.

Ingredients: 1 cup white rice (non-parboiled) and 3 cups water

Directions to cook: Wash the non-parboiled rice in a pot. Add water to the rice and let it cook till the water is dry and very soft. Next, using a wooden spoon, mash the rice against the edges of the pot to bring the rice together. Stir and mash continuously until it forms one nice lump. Tuwo Shinkafa is often served as an accompaniment to various soups and stews such as egusi, miyan Kuka, miyan taushe, and stew for overall nutrition.

Say what??!! There is nothing in my entire life that I've eaten that ever made me want to slay my momma. But guess what? These are award-winning spice blends.

How did I find out about these products? The Internet and Facebook, in particular, is a beautiful thing. This person saw my foodie website, Everyday Exotic Spices, which is advertised on Facebook via my business page, contacted me, and asked if they could send me samples. Of course, my response was “Yes!”
Received various products in a box delivered straight to my door. Tried them in different recipes and here's my reaction. Did I want to slap my momma? No. But I was ready go mano-y-mano with my spouse!
He wanted to keep it all to himself. I'm like: “Oh no! That ain't happening!!”

Foodie Friday : Banana Brownies - Back for Seconds

Scanning pins on Pinterest and came across one pin shared by food blogger, Stephanie Brubaker, (original link) that made me start looking for recipe variations. Being that it's also #foodiefriday, it's also a perfect excuse to do a little detective work.  Brownies are on my list of fave foods, right along with cheesecake. But most of the brownies I enjoy are chocolate.  Never heard of a Banana Brownie. Have you?

Netflix Series: Korean Fried Chicken Rhapsody

This is the fifth (and final) post highlighting the programs in the Netflix Rhapsody series tracing the origins and evolution of the Korean cuisine that we enjoy today.

In the USA, fried chicken is Southern food comfort and everybody brags that they have perfected the best recipe ever! Not trying to diss my Southern friends and kinfolk, but Korean fried chicken, affectionately referred to as KFC, is a global sensation. It’s crispy on the outside, juicy meat on the inside, with bold flavors, and the recipe has variations. 


One of the most popular variations is yangnyeom chicken, which is coated in a sweet and spicy sauce made from a combination of gochujang (Korean chili paste), soy sauce, garlic, ginger, and other seasonings. This sticky flavorful sauce clings to the crispy chicken. (Admit it! You’re drooling aren’t you?) 


Another variation is ganjang chicken, glazed with a savory soy sauce-based marinade and garnished with sesame seeds and chopped green onions. As can be seen in Korean dramas, it’s a social food served at gatherings, accompanied by beer or soju (Korean rice liquor). Fried chicken restaurants in Korea are known as chimaek joints.

Foodie Nuggets: Exotic Fruit: CUCAMELON

A cucamelon is known by many names, such as, Mexican sour gherkin, Mexican miniature watermelon, Mexican sour cucumber, mouse melon, or pepquino.  The taste is described as a cucumber with a touch of sour lime mixed in. Most people use it in salads, pickled, or used in salsa. They are usually eaten raw, but you can cook them lightly and add them to a stir-fry. They can be refrigerated (will last up to 1 month) and frozen (will last up to 3 months).

Netflix Series: Korean Jjajangmyeon Rhapsody (2024)

Korean Jjajangmyeon has been described as a culinary experience that embodies the fusion of Korean and Chinese flavors. It is a popular Korean-Chinese noodle dish characterized by its savory black bean sauce. In “Wok of Love” this dish is mentioned frequently. 


Originating from Chinese immigrants in Korea, and is now a staple of Korean cuisine. The dish consists of chewy wheat noodles topped with a thick, glossy sauce made from chunjang, a Korean black bean paste. The sauce is typically stir-fried with diced beef or pork, onions, zucchini, and other vegetables. The blend of umami-rich black bean paste black bean paste, savory meat, and sweet caramelized vegetables can be described as pure harmony and that’s why it is a beloved comfort food. People enjoy it as a standalone meal but can also be paired with other Korean-Chinese dishes.

Six (6) Benefits of Air Fryers Plus Air Fryer Bacon and Other Recipes (Reblog)

Everybody knows by now that air fryers have revolutionized home cooking. 

This nifty kitchen appliance offers a healthier alternative to traditional deep frying methods by using hot air circulation to cook food. Since the air fryer requires a fraction of the oil or sometimes none at all, that also means lower fat intake and fewer calories. The textures of the foods are still crispy just like when food is deep-fried. Everybody also knows how expensive cooking oil is these days. At my local grocery store, a small bottle of canola oil that used to cost 98 cents sells for almost $2 these days.

A healthier cooking option is not the only advantage or benefit of using an air fryer. There are several

  1. Air fryers cook food faster and are are more energy-efficient.
  2. Air fryers cook a wide variety of foods. Not just traditionally fried items like French fries, chicken wings, but also baked goods. The appliances usually come withs accessories like baking pans and racks, etc.

  3. Air fryers are not only easy to use but easy to clean because of the non-stick coatings on the cooking basket and accessories. Many parts are dishwasher-safe.

  4. Air fryers are super safe! No worries about hazards, such as hot oil splattering and the risk of burns from handling hot oil.

  5. Air fryers have precise temperature control and even heat distribution. When cooking foods don't need to be constant monitored and the results are often consistent.

Two things are on my gift wish list for the holiday season. One is a rice cooker and the other is an air fryer

In conclusion, air fryers offer numerous benefits that appeal to health-conscious individuals, busy families, and anyone looking to simplify their cooking routine.

Korean pork belly, known as samgyeopsal (삼겹살) in Korean, is a quintessential dish in Korean cuisine and it originates from South Korea. Korean barbecue culture is a favorite among locals and tourists alike. Thick slices of pork belly that are marbled with layers of fat and meat, are usually grilled at the table over a charcoal or gas grill.  The grilling caramelizes the fat, and imparts a delicious smokiness and crispiness to the meat. 


What is samgyeopsal served with? various pickled vegetables, sliced garlic, green onions, fresh lettuce leaves, and ssamjang (a savory and spicy dipping sauce made from fermented soybean paste and chili paste).

Hanwoo beef is a source of national pride. As such, South Korea has very strict standards to ensure the superior quality of Hanwoo cattle. Korean farmers are very meticulous throughout the breeding and rearing process. Hanwoo beef is used in a wide range of dishes, from traditional Korean barbecue (galbi) to hearty stews (jjigae) and savory soups (guk). Hanwoo symbolizes prosperity, celebration, and hospitality. 5 Exotic Spices From Around the World by Melisa Marzett (Guest Post)

Even though many herbs and spices are now readily available in local grocery stores all around the world or can easily be purchased online, most of us don't know the history of these marvelous cooking ingredients and which country is responsible for introducing these exciting flavors to the global community.  Sharing a brief introduction to five (5) exotic spices:

1. Asafetida. This is an Asian spice made from the roots of certain species of Ferula. It is a gum-like spice with a very strong and unpleasant smell.  Actually, the name of the spice has a Latin origin, which means “evil-smelling gum”.  Asafetida is common in Indian vegetarian cuisine and is often the main ingredient in rice and bean dishes. Additionally, it has a wide range of medicinal properties and is beneficial for people with digestive disorders, high cholesterol, and/or nervous disorders.  Asafetida is rich in minerals and nutrients, such as iron, calcium, phosphorus, and protein.  Although most chefs and cooks rarely prepare a dish without onion and garlic, some people do not eat onion or garlic.  Certain people are allergic to onions and for some people, garlic causes extreme heart burn.  Asafetida is an ideal spice for those people.  In fact, its smell is similar to both onion and garlic.


2. Dried Avocado Leaves.  This spice (or herb) originated in Mexico. It is one of the most popular spices in Mexican cuisine.  Avocado leaves have an aniseed fragrance; however, these dried leaves are odorless and have a pungent taste. Dried avocado leaves are added to bean or meat dishes. Regarding health benefits, they are useful for people who have kidney stones and hypertension. Noteworthy:  Only certain varieties of avocado leaves are to be used in cooking or for medicinal purposes because some kinds of avocado leaves can contain toxic substances.

3. Epazote. This is another essential spice used in Mexican cuisine. Its extraordinary (or strange) scent can be described as a combination of kerosene, mint, and citrus. Epazote is made from the leaves of Mexican herb called dysphania ambrosioides (aka "Mexican tea").  It is used with bean and meat dishes. Additionally, it can be used in soups.

4. Grains of Paradise. This delicious spice is an integral part of West African cuisine. It is obtained from a flower called Aframomum melegueta. Africans believed that this flower grew in Eden. Grains of paradise look like seeds and have jasmine, citrus, and hazelnut odor. It can be added to meat, fish, and potato dishes.

Ras El Hanout 
Ingredients include over 30 different herbs and spices, such as: 

 Grains of Paradise, Lavender, turmeric, ajawan seeds, kalajeera, ginger, galangal, oris root, rose buds, monk's pepper, cinnamon and more!


5. Juniper Berries. Actually, juniper berries are more likely to be cones than berries. It has the smell of fir and is used for cooking meat dishes, especially stewed rabbit or beef. These “berries” grow on the juniper tree, are common throughout Europe,  included in ancient Greek recipes, and have been found in the Egyptian pyramids.  A wide range of German traditional dishes are cooked with juniper berries.

Netflix Series: Korean Cold Noodle Rhapsody (2021)

The Netflix Rhapsody series is intended to trace the origins and evolution of the Korean cuisine that we enjoy today.  To date, there are five (5) rhapsody programs.  An EES blog post will be published to highlight each program.  This is the first post.

Korean Cold Noodle Rhapsody (2021)

Korean cold noodle, known as naengmyeon (냉면) in Korean, originated from North Korea. The dish consists of long, thin noodles made from wheat or buckwheat flour, served in a chilled broth, then topped with various ingredients. 


The toppings can include boiled egg, cucumber, Korean pear, pickled radish, and thinly sliced beef. There are different varieties and the most common variety is mul naengmyeon, which are noodles in a clear, tangy broth made from beef, chicken, or dongchimi (radish water kimchi).


Naengmyeon (cold noodle) is not only revered for its taste but also for its health benefits and cooling properties, making it a particularly popular dish during the summertime. The Korean cold noodle is often served during special occasions, like weddings or birthdays.
