Foodie Friday : Recipes | Desserts | Pineapple Stuffing and More!

This week's Foodie Friday spotlight is pineapple!  Pineapple is included with a list of refreshing super foods we should eating during the summer.

Personally, I am sort of glad the recipe was modified.  Ever since the character Hannibal Lecter - played by Sir Anthony Hopkins - made that comment about fava beans in the movie "Silence of The Lambs", the beans just don't look the same on my plate.

When You Say 'Eat Healthy', I Think 'Eat Salad'

People (especially me) always associate healthy eating with eating salad.  My mother rarely served a salads with our meals.  It was a meat, a starch, and a vegetable.  She never served us a salad (like lettuce and tomatoes) nor did we get dessert.  We didn't complain.  I got used to not eating salad.  

Then I became an adult and went to university and found out that salad was "expected".  Except for this one guy that I knew.  He kept saying salad was "rabbit food" and wouldn't eat it.  Not me.  When I went to the cafeteria I could eat as much salad as I wanted.  And I did!  Do you know why?  Because it was "healthy" and I could eat a lot of it!  It was one the few foods that I could eat a healthy amount of and I didn't gain weight.  

So whenever I packed on a few extra pounds because I was wolfing down too many pizzas with my friends late at night, the next 2 weeks I went on a diet and ate salads for lunch and for dinner.  The pounds came off easily.  That was THEN (1970s).  This is NOW (2021).  The pounds don't come off so easily now, but I still enjoy eating salads.  I also enjoy collecting salad recipes and sharing them.  Hope you like these!

Final share.  I know some people don't like kale. They complain that it's too tough and chewy for a green leafy vegetable. So, just in case you don't like eating kale, here are some “kale substitutes”.  Use them instead of sale and enjoy your salad anyway!

It was no surprise to me that California Cuisine was on the list. I am a little upset that Caribbean cuisine did not make the list. But I understand. ☺ As to why kosher Jewish food isn't Number 1 on the list?  Your guess is as good as mine.

I have a fond memory of fruitcake. It dates back over 40 years and it was the time when my husband-to-be took me to his childhood home in The Bahamas to meet his parents. It was the Christmas holiday season.  His mother offered me a piece of fruitcake. I did not want to offend her but I really was not a fan of fruitcake. She served me a slice with a cup of coffee. I don't know where my mother-in-law got her fruitcake but to my surprise ... it was delicious!! That is a sweet memory and that's why I was happy to reblog this post. It evoked that memory and took me on a sentimental journey.
Most commercially-made fruitcakes are alcohol-free, but traditionally, fruitcakes usually contained alcohol; both for the flavor and to preserve the cakes for months. In the 1800s, wood burning stoves didn’t have temperature gauges, and oven temperatures varied based on the type and size wood used. You were supposed to learn how to determine the heat through experience. Some recipes ignored the oven temperature and others used terms such as a slow, moderate, or quick oven. ...

Perfect Gift for the High School Graduate Who is Off to College - A Cookbook!

A Cookbook? For a college student? Am I nuts?

No. No I am not. During my freshman year or first year at university, I was fortunate because I had a meal plan. As long as I got to the cafeteria before closing time, I didn't starve! But for my remaining 3 years at the university, I lived in an on-campus apartment and my roommates (friends I made when I was just a freshman who lived in the apartments) loved to cook!! The Chinese-Jamaican guy who lived in the apartment above ours always had good smelling coming out of his kitchen! His specialty was curry chicken. 

But before I get too far down memory lane and forget why I am writing this post, let me get back on track. The purpose of this post is to recommend a cookbook for a student you know who is heading off to college, already in college, getting ready to graduate from college. In fact, this cookbook is great for anybody!!!

1 1/2 cups all purpose flour 1/4 cup sugar 2 tsp. baking powder dash of salt Combine all dry ingredients in a large bowl. In a separate bowl stir together all wet ingredients. Add to flour mixture all at once and stir just till moistened. Heat about 2" of cooking oil in a deep pot.

Food Blog Spotlight: Home Cooking Presented by Hilda's Touch of Spice

Spotlight on another awesome food blog. This one has been save in my bookmarks for forever! It's called “Hilda'sTouch of Spice”. The blog is published by Hilda Mascarenhas. Her recipes include a wonderful sampling of European, Asian and American cuisines, and categories are for holidays, by countries, vegetarian versus non-vegetarian, desserts, side dishes, soups and salads, and more! The best way to describe her blog is using her own words:

"Mouth watering recipes & essential cooking advice, helping you to add the right Touch of Spice to make simple home cooking special!"

That's the description from her Facebook page.  In 2013 her page reached 1,000 Likes.  As of today (2016), it has over 5,000 Likes!  Isn't that marvelous?
